{flourless vegan} peanut butter chocolate chip blondies

Flourless blondies made from 5 main ingredients. All natural ingredients. Soft, dense, full of flavor. Super easy to make. Peanut butter blondies that are gluten free, grain free, vegan, egg free, dairy free and low in sugar!


  • 2 large greenish yellow raw plantains (14oz after being peeled)
  • 3/4 cup natural creamy peanut butter
  • 2 tablespoons maple syrup
  • 2 tablespoons coconut oil, liquid
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon sea salt (optional)
  • 1/2 cup of Enjoy Life Chocolate Chips


  1. Preheat oven to 350 degrees.
  2. Grease a 8×8 pan with coconut oil.
  3. Peel plantains.
  4. Place plantains into food processor (or blender) and peanut butter. Blend.
  5. Next add in maple syrup, coconut oil, baking soda and powder and sea salt.
  6. Continue to blend until smooth.
  7. Pour batter into a large bowl.
  8. Scoop chocolate chips into bowl. Stir until well combined.
  9. Pour into greased pan.
  10. Bake for about 30 minutes.
  11. Cut into 10-12 slices.
  12. Enjoy.
  13. Store in refrigerator or freezer for longer shelf life. Good room temperature or slightly warm.
