  1. Pre-heat oven to 350.
  2. Peel plantain and slit a long opening on top.
  3. Coat with coconut oil and bake in oven for about 30 minutes.
  4. Let plantain cool a little before topping with pizza sauce and cheese.
  5. Place back in oven and bake until cheese is melted.
  6. Enjoy!
  7. Serves 1
