We used one of our favorite pizza sauces Enrico’s pizza sauce. We have been enjoying this sauce for years. Still our go-to, but as we mention in the video the one thing we do not like about it is the cornstarch. But since we don’t eat it that much we feel it is okay.

If you have a single plantain sitting around go grab it, peel it, bake it. Then top with your favorite pizza toppings.

3 ingredient individual pizza

A healthy 3 ingredient pizza. Gluten-free. Grain-free. Egg-free. Pizza.

Ingredients

  • 1 plantain
  • your favorite pizza sauce
  • cheese of choice
  • additional toppings as desired

Instructions

  1. Pre-heat oven to 350.
  2. Peel plantain and slit a long opening on top.
  3. Coat with coconut oil and bake in oven for about 30 minutes.
  4. Let plantain cool a little before topping with pizza sauce and cheese.
  5. Place back in oven and bake until cheese is melted.
  6. Enjoy!
  7. Serves 1

This recipe was inspired from our whole baked stuffed plantains. And the goat mozzarella we used was Woolwich from Whole Foods.

And we have received more questions regarding plantains, specifically about their GI index.

A cooked sweet plantain (more on the ripe side so blackish) is high.

A cooked green plantain (more starchy) is low.

The glycemic index of cooked green plantain is 40. Carbs around 34 for 120 grams of a plantain. We feel our bodies do better with the green ones but still enjoy the more ripe plantains occasionally.

Personally we both like more sauce! Nothing beats a warm slice of pizza, right? Now even better with plantain pizza. Haha maybe only us would say that, but hey we love our plantains.

I like Neapolitan style pizza made with quality ingredients. It’s really light and not at all greasy, with a crispy, chewy crust

I’m actually not a huge pizza person, being that, I think I’d totally love this considering it’s on plantains:) And those things are just so darn delicious. There was a huge sale at the market I go to and I got 10 for $3 so pretty excited for these plantain recipes.
