  1. Peel plantain.
  2. Place peeled plantain into food processor or blender.
  3. Add in eggs and raw cacao powder.
  4. Mix together.
  5. Next add in coconut oil.
  6. Continue to blend together.
  7. Heat up skillet or griddle on medium-low heat.
  8. Scoop about 3-4 tablespoons of batter and cook until bubbly on top and golden on the bottom, about 4 minutes.
  9. Flip and cook until golden on the bottom, about 2 more minutes.
  10. Makes about 18 pancakes. Serves 1-2.
