Happy Friday the 13th!

Ready for another easy…healthy dessert recipe? It involves a few of our favorites.

Well, we think you guys will love our mint chocolate chip cookie sandwich recipe!

It sure beats store bought cookie sandwiches that are filled with preservatives, artificial coloring, sugar, and everything in between.

These homemade mint chocolate chip cookie sandwiches are purelytwins approved 😉

We took our favorite soft batch cookies and sandwiched them in between mint chocolate chip avocado ice cream.

And rolled them in chocolate chips…because more chocolate chips the better right?

Mint chocolate chip cookie sandwiches are one dessert we could live off of, seriously. Just ask our older sister. She would bake for us all the time when we were younger and we always requested mint chocolate chip ice cream sandwiches. And she made the best ones!!

But times have changed and our tastebuds have changed, therefore we had to upgrade our childhood favorite recipe.

We hope guys enjoy this recipe as much as we do.

mint chocolate chip cookie sandwiches

A healthy mint chocolate chip ice cream cookie sandwich made with natural ingredients. Sure beats store bought ice cream sandwiches!

Instructions

  1. Make one batch of mint avocado chocolate chip ice cream recipe.
  2. Then make one batch of soft batch chocolate chip cookies. Let them cool.
  3. Once the ice cream is ready scoop some onto one cookie and then top it off with another cookie.
  4. Store in freezer if you have extras.

My favorite childhood thing I could eat everyday is cookie dough! As for the craziest cookie sandwich I’ve tried…it would have to be a fig gelato style ice cream inside 2 soft butter pecan cookies 🙂
