healthy cheesy plantain fries

Instructions

  1. Pre-heat your oven to 375 degrees.
  2. Peel your plantain.
  3. Coat your plantain in coconut oil. Leave it whole or cut into fries.
  4. Bake for 30-45 minutes.
  5. If baked whole, once done very carefully cut into fries. Coat with a little bit more coconut oil.
  6. Bake again for 15-20 minutes.
  7. Grate your cheese.
  8. Take out of oven and cover in cheese.
  9. Place back in oven to melt the cheese.
