How is everyone doing today? How was everyone’s July 4th? Hope all you #purelfitlife #purelypower friends enjoyed your day off πŸ™‚ We did! Felt great to have a day off yesterday.


Well hold onto your seats purely fitters…Okay maybe it is not that big of news.Β 

But we have found a new favorite way we like to enjoy our plantains now.

Yes plantain chips and plantain bread (plus plantain socca and pancakes) are still very popular in this household.

Looking for a fun way to enjoy plantains? Try baking them and then stuffing them different way. Here are 4 great and healthy ways to enjoy stuffed plantains. It makes for a quick meal or snack idea.

How to make baked filled plantains!

It’s easy.

Let us show you how.

Looking for a fun way to enjoy plantains? Try baking them and then stuffing them different way. Here are 4 great and healthy ways to enjoy stuffed plantains. It makes for a quick meal or snack idea.

All you need is a plantain. Peel it.

Leave it whole.

Heat up your oven to 375 degrees.Β Coat your plantain with about 1 teaspoon coconut oil or ghee or real butter. Bake for 30 minutes. Flip and bake for another 15-20 minutes.

Cut a little slice on top and peel away (making a generous hole in the plantain) and fill with favorite topping. Β Super simple, right?

Here are our favorite ways so far. Really the filling ideas are endless. Be creative and have fun!

Fill your baked plantain with coconut butter and top with cacao nibs (or chocolate chips). Perfection.

Next up — protein filled plantain. We made our perfect fit protein frosting to fill our baked plantain and topped with cacao nibs. How we make our protein frosting — just take a scoop of protein powder mixed with a little coconut oil and a little water which we add in slowly until we receive a nice smooth frosting like consistency. Perfection.

Next …. chocolate plantain! Yes please. Make any chocolate sauce of your liking (could even use a melted bar chocolate) and drizzle over your baked plantain. We mixed raw cacao with coconut oil and topped with coconut flakes. Perfection.

Last but not least … avocado filled with sea salt baked plantain! Perfection!

  • 1 plantain

  • toppings:
  • coconut butter
  • nut butter
  • chocolate
  • protein frosting
  • avocado
  • –really anything you want


  1. Peel your plantain.

Have you ever eaten ripe plantains raw like a banana? I do sometimes or sometimes I toast them in which case I’d definitely have them with avocado.

Still can’t find plantains…perhaps they are not in season in my location at this time of year, who knows…but they look an awful lot like bananas so….not sure how you do the protein frosting, but interesting. I assume that protein is similar to sunwarrior or other protein frostings? (and on that note, thoughts on the Tone it up diet?)…

ever try hemp pro 70? Or New Zealand whey isolate 100% (free from hormones, etc) that Heather at “sweetly raw” uses?

yes they do look a lot like bananas, sorry you can’t seem to find any. maybe soon! for the protein frosting we just mixed some perfect fit protein powder with some water to make a frosting like consistency. We like the Tone it Up diet, they give a lot of good overall information, meal ideas and lots of recipes to get people started. We have tried hemp protein, we like it. Never tried whey as we can’t really seem to handle dairy that well – maybe one day we will give it a try. Don’t beat yourself too much over night time binging, it could be a sign from your body that it is low in a nutrient or something. Take the stress off and make sure you are eating enough healthy fats πŸ™‚ HUGS

I never use plantains, but this sounds awesome way to start! All of these fillings sound delicious! I’ve never bought plantains before…do you have any tips on knowing when they’re ripe? Are they like bananas…ripe when they turn yellow?

you can eat plantains in any stage- the green ones are more starchy and the brown-yellow ones are more ripe and sweet like a banana. We tend to get mostly green ones, sometimes the yellow brown ones.

I am curious about the plantains. Do you wait till they are completely ripe for the plantain bread before you use them? How about the baked plantains?

we enjoy our plantains when they are green maybe a little yellow, they are more starchy that way and less ripe and sweet.

These look delicious, I am definitely going to have to try them. I love using plantains to make the Cuban food Tostones, slightly fried plantains. I use coconut oil to make them. So yummy and simple!

Thank you for all the Plantain recipes! I just moved to the amazon with my husband and i have had the hardest time finding healthy recipes because ingredients are so limited here.
This helps me SO Much because plantains are literally the most common and cheapest ingredient i can get here. πŸ™‚

I seriously recommend not peeling your plantains! This is the traditional Latin American way- just cut about five slits in them so they dont explode. Cooking them in the peel greatly enhances the flavor and moisture.
