Before we get to all the food, we must talk about fitness right?
We have been busy getting the first week of workouts ready for our Purely Fit Power Program! (first email going out in a few minutes, we are so nervous and excited!)
So we have been walking when we can…soaking up the sun!
Still starting our days with raw green juices!
Green juice goes perfectly with figs and eggs.
As much as we love green juices, we also have been enjoying spirulina protein smoothies! Nice and cool and refreshing on these hot days.
Raw biscotti anyone??
And guess what?? We are working on a new cookbook!
Yep! We have cookbook 2 almost done and now cookbook 3 in the works.
So lots of recipe testing…and random eats.
To help balance out all the sweeter things, we have been enjoying plenty of savory meals.
Of course many meals featuring plantains.
We even managed to whip on some amazing meals during all the craziness.
Plantain socca with coconut yogurt makes for a perfect lunch! Sometimes the plantain socca can come out a little gooey but we still find it yummy especially when we mix it with yummy toppings.
What we did: made egg-free plantain socca and topped it with coconut yogurt that we mixed with chia seeds, and topped it off with cinnamon!
The next random recipe we whipped up was beef liver meatball pizza!
We baked our plantain bread on the skillet in coconut oil and then crumbled in beef liver meatballs.
We have been LOVING our meals lately! We look forward to every meal. And we leave each meal feeling happy and satisfied.
Simple meals. All made with just a few ingredients.
And we have been ending most nights with dessert. haha guess we need to work on our night time cravings more 😉
