Two new ways to enjoy plantain bread

by purelytwins

walking

Before we get to all the food, we must talk about fitness right?

We have been busy getting the first week of workouts ready for our Purely Fit Power Program!  (first email going out in a few minutes, we are so nervous and excited!)

So we have been walking when we can…soaking up the sun!

green juice

Still starting our days with raw green juices!

great breakfast

Green juice goes perfectly with figs and eggs.

green drinks

As much as we love green juices, we also have been enjoying spirulina protein smoothies!  Nice and cool and refreshing on these hot days.

biscotti

Raw biscotti anyone??

A FAVORITE recipe in our cookbook!

new cookbook work

And guess what?? We are working on a new cookbook!

Yep! We have cookbook 2 almost done and now cookbook 3 in the works.

making new recipes

So lots of recipe testing…and random eats.

graham cracker cookie

mmm cookies

meals

To help balance out all the sweeter things, we have been enjoying plenty of savory meals.

friday-breakfast

Of course many meals featuring plantains.

yogurt pancake stack

We even managed to whip on some amazing meals during all the craziness.

plantain with yogurt

Plantain socca with coconut yogurt makes for a perfect lunch! Sometimes the plantain socca can come out a little gooey but we still find it yummy especially when we mix it with yummy toppings.

What we did: made egg-free plantain socca and topped it with coconut yogurt that we mixed with chia seeds, and topped it off with cinnamon!

SO GOOD!

liver meatball bread

The next random recipe we whipped up was beef liver meatball pizza!

We baked our plantain bread on the skillet in coconut oil and then crumbled in beef liver meatballs.

#strangebutgood

We have been LOVING our meals lately! We look forward to every meal. And we leave each meal feeling happy and satisfied.

liver beef plantain pizza

Simple meals. All made with just a few ingredients.

And we have been ending most nights with dessert. haha guess we need to work on our night time cravings more 😉

carob protein thin mints

Carob protein thin mints…so addicting.

cookie

Single serving cookie!

YUM!

giveaway jewelry

And we got something fun..AKA giveaway…coming this week. NON FOOD related.

Have a great day everyone!

I am so obsessed with your food, no wonder why you have cook books, LOL! I need to purchase one or several for my brother’s girlfriend as she loves to cook for him but he cannot do eggs, gluten, soy or dairy and she used to love to make him cookies, mac & cheese, etc….. Thanks ladies for your creativity!

You are both so pretty and so positive. Your nighttime treats are good…I’m very very bad at nighttime 🙁

I want to ask what are on a lot of those photos..I can’t tell, hehe…
also not sure of difference btw plantain and banana (?). I have so SO much I want to chat to you both about. I emailed you….
I feel like a pest. I’m sorry. Just hoping to hear from you. Thank you very much!

guess the main differences are that plantains usually (can be) more starchier. Slightly different taste thicker skin (the peel).

Hi there! I’m a HUGE fan but was wondering why you think its so bad to eat at night? I’m often so hungry that I cannot fall asleep without a snack or even meal sometimes! Just curious, I feel that food is food and will be digested regardless, especially as your body is recovering at night and needs energy? Just a question! Im so excited for your cookbook 2!

we aren’t against eating at night, for us if we eat too late sometimes we just have a hard time sleeping.we are just playing around with different eating times to see how our bodies do. if it works for you great – keep it up 🙂 and thank you!

it would help if you explained exactly what these meals consist of and how to make them. Hard to tell from the picture
