We hope everyone is getting outside this weekend and enjoying the warmer days. Well, hopefully it is warmer where you live. It has been getting really hot here in NC. And that brings a mess of bugs and mosquitos. Not fun. We have some natural mosquito repellent ideas pinned on our pinterest board so we will have to start making some of those to see if it helps with keeping them off us! Anyone else getting ready for mosquitos?
We updated our grain-free egg-free pancakes yesterday as we forgot to mention that when you weigh out the plantain – it needs to be peeled first! You weigh it without the peel. That goes for all our plantain recipes. And the reason why we used a green plantain over a more yellow/black ripe one is that for having no eggs in the recipe we felt the more green-starchy kind of plantain worked better. But feel free to play around with it.
As we mentioned we will continue to play around with more pancakes recipes. We have tried making some with homemade coconut milk buttermilk and they turned out alright. Really flat and mushy. So the recipe experiments continue 🙂
Lori: Yesterday my workout was doing our 5 minute #plankworkout as my warm-up. Followed by doing our PFL workout #14 strong back and core. And ended with doing our #PFChallenge back routine. Felt great to really burn out the back muscles! And did 4 sets of lower ab raises on my equalizer.
Michelle: I started my workout yesterday with #purelyfitlife 10 minute ab routine. Next did our strong back and core workout as well. And did the #PFChallenge back routine to continue my journey to getting a strong back.

Lori and I wake up each day feeling blessed to be able to workout. Wake up with determination to reach our fitness goals. We both have our certain areas on our bodies that we are working on gaining more muscle growth. It takes time to really see results. But if you continue to wake up happy and motivated to make things happen – they will! Believe in yourself and never give up.
You have the power within you to make a difference!
Lori: Started my day with a my green juice. 8oz of pure nutrition and energy!
Then it was time for my favorite – eggs cooked in ghee with a raw runny yolk and plantain pancakes (one of the trial recipes we created) and coconut oil.
Michelle: Just like Lori my day started with green juice after having my morning tea lemon water and supplements.
I had the same breakfast plate as Lori. I topped my plate with cinnamon. Sooo good!
Lunch was amazing. We enjoyed some baked salmon, homemade sauerkraut, sautéed greens in bacon fat, bacon and coconut oil.
Later in the afternoon we took Jax to the park to get some exercise. Plus we wanted to do some sprints! The park had a basketball court, so we did 12 sprints across it.
Sprints is something we are getting back into doing. We hope to do them a few times a week. After doing them at Blend retreat at the GPP Fitness workouts we feel in love with doing them. They are fun to do and sprints are great for the body! We hope by doing more of them will help us reach our fitness goals better.
We also made some more grain-free egg-free pancakes – this time with homemade coconut milk buttermilk and some sunflower seeds flour (ground up sunflower seeds into flour). Also added in some baking powder. Needless to say — they did not turn out. They looked so promising when cooking but as soon as they hit the plate. BAM. Deflated. Very thin and mushy. Oh well.
Enjoyed some ‘failure’ pancakes. Topped them with some coconut oil, which fixes everything haha
Michelle’s dinner plate – baked mahi mahi, roasted turnips, sunflower sprouts, spiralized yellow summer squash, black lava sea salt with ghee and coconut oil.
Lori’s dinner – same as Michelle except enjoyed half avocado. Delicious. I did itch my skin a little bit yesterday and the day before (both days I have had avocado), but I am not ruling it out just yet. After talking with Michelle after what foods we feel have been causing eczema is a little tricky. We are narrowing it down to either avocados, sauerkraut (even our homemade one), or carrots. Now if we notice that we still get it even without these in our diets for a few days then we will have to dig a little deeper. As skin issues can be caused by different things. We will keep you all updated.
We are off today to go do work on some new changes coming to our Purely Fit Life. We are planning out the future and thinking of new ideas to play around with. Plus we are working on another small fun little e-cookbook, well just started the idea – still have to make the recipes for it.
Everyday we wake up determined, no just in our fitness goals, but in our everyday life. Even though we have a lot of goals and projects, and they take longer than expected, we never give up. Knowing that when we spend a little time each day it will get done — the goals will be reached. So we challenge you — to wake up everyday determined!
