June Purely Fit Challenge details

Happy Saturday luvs!  And happy June 1st!!

Today is a beautiful sunny and hot day in NC. And we are loving it!

Bring on the sun and vitamin D 🙂

We are thrilled to share our first Purely Fit Challenge details with you guys today. More details on that below. First our highlights from yesterday.

Yesterday we did some planking along with filming a new #purelyfitlife workout video for you guys!  We are trying to get back into doing our planks more daily again. We have missed them. They are such a great exercise that works the whole body. And we feel it helped give our abs that little extra touch to make them strong.

green juice cups

First up was our very green juice. We sipped on this as we made our eggs and plantain socca (so happy that you all are loving that recipe)!

Had a mix of local pasture raised eggs along with local duck eggs cooked in ghee served with some plantain socca. SOOOO good!

Did some work followed by playing with crazy Jax. He has been obsessed with this stick. Every time we go outside he picks it up and plays with it. Too funny.

Also made ourselves avocado pudding. We wanted some plantain avocado pudding but did not have any plantains cooked up. So we decided to do one similar to the one in our cookbook but just add in some perfect fit protein powder to make a protein pudding. Love our thick puddings!

We both were hungry so we enjoyed an early dinner. Salmon with turnips, along side mashed avocado with sardines. Topped with coconut oil, black lava sea salt, and nutritional yeast. YUM.

Next we got ready to hang out with our friends at a local bar to watch our college baseball team play on tv.

Our college team – Elon – is in the NCAA Division I Baseball Championship tournament.  So a group of the baseball alumni players (our close friends too) all live here so we were able to watch the game together. It brought back so many memories of watching these boys play during college. Fun times!

We brought our own kombucha with us in our purses (yes we are crazy like that) and just ordered a cup of ice and tequila straight. We got some strange looks from the waitress but that is ok as we enjoyed our kombucha cocktail 🙂  It was a great baseball game too and Elon won!! So lots of celebration was happening.

And for today’s challenge is to support a local business. We went to our local farmers market this morning to support our local farmers.

i am loving all of your recipes and challenges lately ladies! so of course i will participate! there should be a make plantain bread or plantain socca day. totally would rock that one. wait isn’t that everyday? <33 love the selfies, you guys are so cute!!

I’m definitely going to take part in the PF Challenge, am pleased to see I did yesterday’s too! It’s a beautiful day today and I just finished university exams so I’ll definitely be spending most of the day outdoors!
