Howdy friends!

Thank you thank you thank you!!! Seriously you guys know how to make girls feel so special and loved. Thank you so much for the sweet words and I hope that my face update will help some of you that might still be suffering. Again if you have any questions about the OCM method for washing face please let me know! Michelle and I plan on doing a few more follow-up posts to that face update as we have more ideas and thoughts to share.

Yesterday was an overall good day for us. We were both productive in getting things checked off our lists.  That always feels good. There is something about crossing things off your to-do list that makes you feel so good.

And we think we created the ‘new’ best bread recipe. That is grain-free. Really free of all allergens, well besides eggs.  But we are working on egg-free version too. More on that below.

Lori: Yesterday was yoga day! Learning to be present every day! Yoga reminds me of that!

Michelle: 30 minutes of yoga…a lot of twisting, which I needed! I felt so tight yesterday morning so yoga was a bit of a challenge. I did practice my headstands and did my push-ups for #whatsbeautiful challenge.  One thing I learned from my yoga practice yesterday was learn to keep calm when things get tough, or tight in my case.  Or even if you fall, like I did many times during it. But I just got back up and got back in it.

A very very green juice (kale, romaine, ginger, mint, cucumber) with eggs cooked up with bananas and coconut oil. Love our runny egg yolks. Sprinkled with cinnamon.

Played in the kitchen more with a few new plantain recipes. Yes we are obsessed. #sorrynotsorry

Just when you find something that you feel your body is really liking it is hard not to eat it.

Also tried making some plantain socca. Yep you heard us right… plantain socca. It almost came out. One last adjustment to it before we share.

Paleo plantain bread recipe. Made from just a few ingredients.

People keep asking what kind of plantains we use – well they normally look this. A little green, little yellow and sometimes have brown spots. We have not tried a full green one yet or a black plantain yet. Normally in the middle.

Cutting and peeling is always fun! haha Can be a bit of a challenge.

Back to our plantain bread like we have mentioned before we love using plantains now as our base in recipes (use them instead of flours), it is a great way for us to cut back on relying on coconut flour or protein powder in recipes. Just adds in more variety in our baking too.

Plantain Bread

We were so excited that our simple plantain breakfast cake recipe made for an amazing grain-free bread!  Gluten-free too!

When we first made our 3 ingredient breakfast cake it already was more bread-like in texture so we had a good feeling that just reducing the eggs would still work!

Oh yay!! We enjoyed the ultimate sandwich. Seriously cannot remember the last time we had a sandwich…probably when we enjoyed another amazing sandwich a few years ago.

We devoured this sandwich!  Plantain bread = brilliant!

Our sandwich was stacked with coconut oil, avocado, yellow summer squash slices and some turkey.

Both felt like a little snack before dinner so we whipped up an carob duck egg pancake topped with coconut oil. (Lori mixed some coconut oil with coconut flour for hers, Michelle just did coconut oil). We seem to make these random pancake snacks frequently. What can we say they are quick to make and tasty.

Lori: Dinner was sautéed kale, turnips, avocado, and tuna. Topped with coconut oil.

Enjoyed a nice simple dinner, just like Lori!

A wonderful day of being productive and being able to enjoy truly amazing food! We feel very blessed.

Yay for community love! Purelycommunity??:) I just want to let you ladies know how following your journey has been such a blessing for me personally. After “celebrating” my 20th bday with a face of problem skin, it was hard to look past that. However, thanks to you two beauties, I told myself that i WILL get better, and to focus on other things. Acne can be a vit b5 deficiency. both my kids cured theirs in just a few weeks (give it 3 to 4 to see results) by taking 1000 to 2000 mg a day of B5 also known as Pantothentic acid. You can probably cut back on the dose after your skin clears. cheap,easy and effective!

Runny yolk lovers unite! You ladies are a huge source of inspiration to me–especially at breakfast. I definitely want to try making your plantain bread, and can imagine it would be wonderful any time of the day, in so many different capacities! Your sandwiches look delicious–that avocado! 🙂 One of the best sandwiches I’ve ever eaten was a pesto-chicken panini at a cafe in California. It was stacked with avocado, sun-dried tomatoes, and gouda, too!

we just wanted to play around with no putting oil in the batter and instead cook bread in oil in the pan to see what it would do.

So the recipe makes 4 slices/2servings,correct?what size pan did u use? This looks really awesome and so easy!!! Now, if only I can find plantains…. How many do u gals buy a week? And any ripening tips?

you cut as many slices as you would like – yes serves 2. we cooked in a 10inch pan. they ripen pretty fast we find. we get some that are green, some that are more yellow brown. so we have a variety of plantains.

so one recipe makes two sandwiches? where do you find duck eggs to buy? When you top your cooked eggs with a runny egg, is the runny egg raw? Is that safe?

we buy our duck eggs from a local farmer here, sometimes we cook the egg and leave yolk raw, we find it safe to eat it raw when it comes from quality sources.

Hi, I cant seem to find any plantain here in South Africa, in fact this is the first time Im even hearing about it. Is it at all possible to use unripe-ish bananas? (Please say yes?)… thanks xxx

Caghrey honestly have to idea, but always worth a try. We have made it with sweet potatoes and did pretty good.

Hi..
I started writing this & just noticed you have answered my question in the last post, that sweet potato can be substituted for plantain? I have never seen plantain here in Australia, do I just chop sweet potato up raw & put in blender with eggs to make the bread? thanks.. you girls are certainly creative in your recipes 🙂

Yum I do love a good sandwich so I had to give these a go! I used bananas as I couldn’t find any plantains and it came out perfect thanks to your awesome recipe, tasted like banana bread so will in future use it as a dessert sandwich. I was just wondering if plantains taste less bananary 🙂

I have bee ALL OVER your pages and I have yet to find ANY of these recipes you “discuss,” (Save the Raspberry bread, which is not the one I want). I do not see the plain bread, NOR THE Breakfast cake you mention. How about a working link to ACTUAL recipes for both????? PLEASE! Thank you.

The recipe for the grain-free bread is actually written on the picture of it. And the breakfast cake is written in the post, not really sure what else to say as the recipes are there. Sorry for any confusion.

Hi girls!

Yesterday I made your Plantain Bread and it was quite sweet. I was expecting to eat a sandwich (which I did) but it was too sweet for that. Still tasty, but maybe better for french toast or similar. My Plantain was quite ripe, but not black.

Maybe is that? Or yours was sweet also?

I have tried all kinds of gluten-free, grain free breads in search of just ONE to make me feel like I’m eating real bread that I have been missing so much. THIS IS IT!! I cannot believe that a plantain and eggs can create a bread- like texture! I was so pleasantly surprised! Thank you for a great recipe!

Also, have you ever tried using plantain flour? I wondered if it would have the same effect in baking. Thanks!

I made this plantain bread and really loved it but my kids were harder to please. Do you know what I could do to make it less dense and more fluffy? Maybe using egg whites? Thanks so much!! Love your site.

I LOOOOOOVED it! So easy to make, and so delicious! I felt like the cookie monster! Plantain Bread monster! hahahahah brilliant. A silly question: this is also very diet friendly, since it´s only the plantain and the eggs, right? no fat or extra sugar added. This is like an extra bonus!
