making nori wraps for a quick healthy lunch

by purelytwins

Our brains are just flowing with ideas 24/7 it feels like. Always thinking of things to do.
We are trying not to get overwhelmed and just focus on one project at a time. We are just both so excited for the future.
Our future. A new business. We are entrepreneurs after all, so always thinking of things to do 😉

Michelle’s Wednesday recap:

carrotjuice

I finally remembered to take my morning supplements and then could not wait to make a juice! After pulling out all of my ingredients, the juice was not big enough so I ended up juicing more carrots!

egg salad for breakfast

Egg salad with coconut oil.

cabbage tuna nori wrap

Lunch was so good! I was craving a nori wrap and this hit the spot for me.

Filled my nori wrap with cooked cabbage, avocado and a can of tuna.  I enjoyed the nori wrap on top of lettuce with coconut oil.

sushi roll for lunch

I did have a cup of bone broth and took digestive pill too.

dinner

Dinner was cooked cabbage and turnips with grass-fed beef and kale with a side of raw carrot slices with coocnut oil and apple cider vinegar. I did take my pre-dinner pills (plus HCL).

mesquite gelatin mush

Pre-dinner snack was gelatin mixed with mesquite and took magnesium pills.

Overall thoughts – I had a good day. No stomach problems. I did drink my water. Staring to feel good again. Gaining my sense of routine back.

Lori’s day:

wednesday-morning-meals

Breakfast was a lovely green carrot romaine juice followed my 2 eggs with more greens and coconut oil.

noriwrapslunch

Lunch – nori wraps was on the mind. Enjoyed some avocado mixed with can tuna and very thinly sliced raw zucchini wrapped in a nori wrap. Served with some lettuce, coconut oil and nutritional yeast.  Love these nori wraps, definitely going to keep trying to eat them on a daily basis.

I also enjoyed a cup of bone broth with my lunch.  I also took digestive pill and HCL pill before lunch.

random-eggcake

Late afternoon I made some peppermint tea and  coconut flour- egg cake.  Simple and so delicious.  Just whipped one egg with one tbsp coconut flour cooked on skillet.

lamb-carrot-dinner

Dinner was thinly sliced raw carrots, more avocado, lettuce, grass-fed ground lamb (from US wellness meats) and steamed turnips. All topped with coconut oil and sea salt. I took all my pre-dinner pills and 2 HCL pills.

making-marshmallows

After dinner it was time to make marshmallows.

My overall thoughts of day:

It was a good day. I was still feeling a little out of it from the traveling and being away for a few days. But I was able to get a lot done with some personal training ideas and thoughts. Proud of being productive. I got back into my habit of drinking my water so that was good.

As you can tell we both love our nori wraps. They are so fun to make and easy to do too. Well, most of the time.

We are still not the best at rolling them and making them look pretty. Practice makes perfect, right? 😉

Who else loves nori wraps? What do you like to fill yours with? Ifyou haven’t tried nori wraps would you? What would you like in your nori wraps? Would you like us to provide recipes using nori wraps?

til next time,

xoxo

Hi! I’ve never made nori wraps, but would like to try. You two make it look pretty easy-peasy. I think I waaaay over think things…keep it simple right! i made your marshmallows….they’re so good, perfect snack. I used Knox to experiment with. I’m patiently…although not so patiently waiting for my order of Greak Lakes from Amazon. Taking a long time. Looking forward to making a healthier batch. I’ve got some anise extract I’m going to try. So many possibilities! Enjoy reading abou your workouts, eats and all! My workouts have fallen apart, stress at work…that’s when I need it the most. The space between my ears needs constant workout…defeat the excuses! xo

i tend to use daikon radish in my nori wraps a lot, it’s a nice clean crunch and pairs well with the taste of seaweed. i love adding tamari+gf Worcestershire sauce to tahini and using that as my spread

oh great ideas Melissa!!! we need to add tahini back into our diet here soon, miss it 😉

I would l to see nori wrap recipes. Which brand and style do you use?

Also, which brand of coconut flour do you use? Raw? Coconut Secret is raw, but Bob’s Red Mill & Tropical Traditions are not. Do they produce different baking results? What’s the difference beyond the obvious of “raw” temperature drying?

Thanks!

KEEP GOING FORWARD TOWARD THE LIGHT AND HOPE!

right we like Coconut Secret brand, and sometimes use Bob’s REd mill. At the moment we see now difference in baking results with them.

I love nori wraps! Mine aren’t prettiest, but I love the taste. I made a beet wasabi dip for mine that was soooo good. Must try it with tuna!

I love nori wraps! I typically have them with rice, avocado and yams for carbo loading meals before long runs or races! But I would like to try them with just the fish and vegetables as well. I also make pulled pork in my slow cooker quite often, maybe I could make pulled pork nori wraps with the leftovers? Just thinking out loud haha….

Also, as for yoga, I usually use a site called My Yoga Online (www.myyogaonline.com) and it’s like NetFlix but for yoga videos. I think it’s around $10 a month and it has a HUGE variety of routines depending on what type and the length of the routine. They also have meditation and other info on their site too if you’re down with that. I have no affiliation with them, I just really like them!

I’ll pretty much do what you gals did nori wrap wise. When my husband and daughter are having tuna salad sandwiches, I’ll just put it in a nori wrap instead. Interested in your tuna avo salad. You are using avo instead of mayonnaise?

Reply
purelytwins March 1, 2013 - 12:53 pm

yes pretty much, we keep it simple by just mashing an avocado with can tuna or can salmon 🙂

Reply
Mina March 1, 2013 - 2:16 pm

I’m going to try it! 🙂
