Making gluten-free carrot cakes with coconut frosting.
Yesterday was a beautiful day for a run. Well, for me at least. Lori is still dealing with snow though it has started to melt away.
We both did a 15 minute run outside in our reebok real flex shoes.
Remember it all starts with just one step!
Keep pushing forward. Don’t look back. Focus on the future and live in the present!

Michelle’s Sunday recap:
I had a very early morning doing some work for Raw Threads (a big event this week for Disney’s Princess half marathon).
I did not take my morning supplements because by the time I got around to finishing work, I just wanted food.
The perfect breakfast, haha, okay well it hit the spot for me. I enjoyed coffee with bacon and pancakes (did something similar to yesterday’s)! Love my casual weekend mornings.
After doing some more work I enjoyed some perfect fit protein with coconut oil as my pre-workout snack.
Lunch (and post workout meal) was mixed lettuce greens with zucchini, cabbage, coconut oil and beef liver meatballs.
Perfect balance of flavors and left my belly feeling happy.
It is actually a bit chilly here in FL, so hot cocoa seemed nice to warm up. Plus Lori mentioned she was having one and it sounded good!
Dinner I kept simple. Canned salmon and sardines with cooked kale and some broccoli slaw topped with coconut oil and sea salt. Another meal that just worked for me yesterday!
Overall thoughts – I enjoyed my day and all my eats! I did take my pre-dinner pills and HCL before lunch. I do think my gut is getting better but I still need things to help like my supplements as healing takes time. I did have a bowel movement and got 8 cups water plus a ginger kombucha.
Woke up feeling like waffles. Gary requested them too 😉
I enjoyed basic coconut flour egg waffles topped with coconut oil and served with some bacon.
Jax still waking up. And always sits like this in chairs, cracks me up every time.
Lunch was a plate full of green and some liver meatballs. I lightly sauteed some kale, zucchini, and shredded brussel sprouts in some coconut oil. Really enjoyed this meal. I also took 2 HCL pills and one digestive enzyme.
Jax still enjoyed playing in the melted snow. Went on a few family walks.
I made more no sugar vanilla marshmallows. Enjoyed some perfect fit protein and coconut oil before going on my run.
And later that afternoon drank some ginger kombucha. The best.
I also had some time to make Gary some carrots cakes (gluten-free and vegan) out of our Purely Classic cookbook. An all time favorite of ours.
Kitchen smelt soooo good. Really hard not to eat one.

I did have a few licks from the bowl, hehe. Love that frosting!! Seriously cashews and coconut butter make for the best frostings.
Late afternoon made myself some hot coca since it was sooooo cold outside.
I needed something soothing to help warm me up.
Love my hot cocoa or as Gary likes to call it watered down hot cocoa — >yes, yes I am and enjoying every sip.
Finally it was dinner time. I took my pre-dinner pills like usual followed by sautéing up some mahi mahi.
Dinner was mahi mahi, half avocado, lots of chopped romaine, last bit of zucchini and grilled broccoli left over from the night before. Drizzled with olive oil and black lava sea salt. Perfection.
Lori’s thoughts of day:
It was another great day. I had a good bowel in the morning, not as good as the day before but a good one still. Drank about 9 cups water plus the kombucha. I had no complaints all day long – no gas, no bloating, no headache. Just felt great. Still on a high I guess from passing my exam. 🙂 My face is still doing good, and feel my back is starting to make some great improvements!!
Like Michelle mentioned I feel my gut and digestion are getting stronger each week. By taking a few supplements still helps with the process even more, especially liking the HCL pills (I feel those have really helped, guess I have low stomach acid).
The journey continues 🙂
