frosting on the cake

Making gluten-free carrot cakes with coconut frosting.

be positive! do not be defeated

Yesterday was a beautiful day for a run. Well, for me at least. Lori is still dealing with snow though it has started to melt away.

We both did a 15 minute run outside in our reebok real flex shoes.

Remember it all starts with just one step!

Keep pushing forward. Don’t look back. Focus on the future and live in the present!

Lori: Thanks again for the sweet words and congrats about my news! I am starting to work on a plan of what I want to do with it. I will share more of my plan here soon plus will share more about Michelle’s and my workouts and how we decided what to do since many of you have been asking.

Michelle’s Sunday recap:

I had a very early morning doing some work for Raw Threads (a big event this week for Disney’s Princess half marathon).

I did not take my morning supplements because by the time I got around to finishing work, I just wanted food.

breakfast coffee bacon coconut oil

The perfect breakfast, haha, okay well it hit the spot for me. I enjoyed coffee with bacon and pancakes (did something similar to yesterday’s)!  Love my casual weekend mornings.

pre-workout-snack brown rice protein and coconut oil

After doing some more work I enjoyed some perfect fit protein with coconut oil as my pre-workout snack.

Lunch (and post workout meal) was mixed lettuce greens with zucchini, cabbage, coconut oil and beef liver meatballs.

Perfect balance of flavors and left my belly feeling happy.

It is actually a bit chilly here in FL, so hot cocoa seemed nice to warm up. Plus Lori mentioned she was having one and it sounded good!

As you can see, we really dilute our cocoa. Sometimes we put protein powder in it. We love skinny hot protein cocoa. We like less intense hot cooca, yes we are weird 😉

dinnerDinner I kept simple. Canned salmon and sardines with cooked kale and some broccoli slaw topped with coconut oil and sea salt. Another meal that just worked for me yesterday!

Overall thoughts – I enjoyed my day and all my eats! I did take my pre-dinner pills and HCL before lunch. I do think my gut is getting better but I still need things to help like my supplements as healing takes time. I did have a bowel movement and got 8 cups water plus a ginger kombucha.

Lori’s recap:

Woke up feeling like waffles. Gary requested them too 😉

I enjoyed basic coconut flour egg waffles topped with coconut oil and served with some bacon.

silly-vizslaJax still waking up.  And always sits like this in chairs, cracks me up every time.

liver-lunchLunch was a plate full of green and some liver meatballs. I lightly sauteed some kale, zucchini, and shredded brussel sprouts in some coconut oil. Really enjoyed this meal. I also took 2 HCL pills and one digestive enzyme.

Jax still enjoyed playing in the melted snow. Went on a few family walks.

I made more no sugar vanilla marshmallows. Enjoyed some perfect fit protein and coconut oil before going on my run.

And later that afternoon drank some ginger kombucha. The best.

gluten-free-vegan-cakesI also had some time to make Gary some carrots cakes (gluten-free and vegan) out of our Purely Classic cookbook. An all time favorite of ours.

Kitchen smelt soooo good. Really hard not to eat one.

Get yourself a copy of this ebook here.

carrotcakesBest part is the frosting on the cake (another recipe- cashew coconut butter frosting in our cookbook)!

I did have a few licks from the bowl, hehe. Love that frosting!! Seriously cashews and coconut butter make for the best frostings.

hot-cocaLate afternoon made myself some hot coca since it was sooooo cold outside.

I needed something soothing to help warm me up.

drinking-hotcocoaLove my hot cocoa or as Gary likes to call it watered down hot cocoa — >yes, yes I am and enjoying every sip.

Finally it was dinner time. I took my pre-dinner pills like usual followed by sautéing up some mahi mahi.

mahi-broccoli-dinner Dinner was mahi mahi, half avocado, lots of chopped romaine, last bit of zucchini and grilled broccoli left over from the night before. Drizzled with olive oil and black lava sea salt. Perfection.

Lori’s thoughts of day:

It was another great day. I had a good bowel in the morning, not as good as the day before but a good one still. Drank about 9 cups water plus the kombucha. I had no complaints all day long – no gas, no bloating, no headache. Just felt great. Still on a high I guess from passing my exam. 🙂 My face is still doing good, and feel my back is starting to make some great improvements!!

Like Michelle mentioned I feel my gut and digestion are getting stronger each week. By taking a few supplements still helps with the process even more, especially liking the HCL pills (I feel those have really helped, guess I have low stomach acid).

The journey continues 🙂

Twins Question: Do you like frosting? Are you a frosting or no frosting cake person? What is your favorite go-to frosting? Vanilla or chocolate frosting?

I need those cakes!!! Carrot cake is my #1 favorite, and the cream cheese-pecan frosting my grandmother made to go on it is the stuff of dreams. Mmmmm…

purelytwins February 18, 2013 - 12:54 pm

one of our favorite cakes too Laura 🙂 and your grandmother’s frosting sounds heavenly!!

Erica February 18, 2013 - 12:54 pm

I cannot believe the snow! SO crazy! I love simple glasses of hot cocoa- the best!

purelytwins February 18, 2013 - 3:33 pm

it was crazy Erica, one minute a nice cold day and then turns into snow, such crazy weather here 🙂

Not being a natural runner, I have found the best way to run is to not make myself do it on a regular basis but just like you – when it’s nice outside, I find I actually WANT to go for a run, because it’s so nice! When you take the punishment, ‘regular’ routine thing out of something you don’t enjoy that much, it becomes much easier to do and actually enjoy!

Kristine February 18, 2013 - 2:17 pm

Frosting fiend… I especially love the frosting recipe on your peppermint protein brownies. I always seem to make extra just to throw it on mint protein cakes, baked oatmeal, and anything else I find in the kitchen!

purelytwins February 18, 2013 - 3:34 pm

another great frosting! and what a great idea to have extra to throw on things, love that 🙂

Audrey Adams February 18, 2013 - 2:57 pm

I am enjoying some of that cocoa right now! It’s so good! Thanks for the recipe. I love hot cocoa, but the sugary packets you get from the store, aren’t for me. This is much healthier.
I am an icing person. I love icing. Sometimes i like the icing more than the cake itself. Vanilla icing is weirdly my favorite. But I prefer chocolate cake underneath.
I ran out of coconut flour and I haven’t had any of your coconut waffles for a while…need to restock. I love them!

purelytwins February 18, 2013 - 3:35 pm

wahoo more hot cocoa fans and icing love 🙂

Emma February 18, 2013 - 4:08 pm

Jax cracks me up- he always looks so serious!
I’ve no idea how you resisted eating one of those carrot cakes Lori, they look gorgeous especially with the coconut butter-cashew frosting. I’m all about the vanilla but I like rich and not too sweet.
Also…meant to ask- do you prefer (or notice a better result) taking magnesium orally or rubbing it on the skin?

purelytwins February 18, 2013 - 4:48 pm

Emma we notice more from taking it orally but do feel the combo works good too.

Camilleforeal63 February 18, 2013 - 4:29 pm

Of course I’m a chocolate gal myself, but vanilla is a close second. So I’m more of a “twist”. Congrats on passing your exam Lori! I was quite chilly myself in FL this weekend, I actually put on my winter jacket when I went to get a coffee. Quick question, I made the coconut pancakes yesterday, but it turned out to be more like scramble eggs? It still tasted AMA, but I was hoping for more of a pancake texture. I didn’t have coconut flour, I ground up coconut flakes so that might of been it? It’s so nice to see the journey you two are on…I was on a similar journey this fall and its NOT easy. I hate to say it almost gets harder NOW figuring out what to add back into my diet, but moderation is definitely key:) Also I know you two have your supplements, but Metagneics EstroFactors and DIM for hormone balancing regulated my period and helped with my skin so much. Thanks for sharing your struggles and success’!

purelytwins February 18, 2013 - 4:50 pm

Yes coconut flour and ground up coconut flakes are two different things when it comes to baking! they provide different textures.

Chris February 18, 2013 - 8:55 pm

Congratulations, Lori! I am so happy for you.

I love vanilla icing. All this icing talk reminded me of Dunkaroos 🙂

Now we need grain free, egg free, sugar free cake to go with it. I guess you girls have some work to do in the kitchen 🙂

purelytwins February 18, 2013 - 9:59 pm

😉 yep!

amanda j February 18, 2013 - 10:58 pm

Jax sitting all proper on the chair is just too darn cute. I love all of the pics of him. He’s such a ham!

Brittany @ Itty Bits of Balance February 19, 2013 - 6:41 am

Hey girls! This might be a dumb question but what exactly is the point of adding gelatin to the diet? I’ve been reading a lot of Chris Kresser’s work, but cant find any obvious answers. Is it for skin or digestion?

Thanks 🙂

purelytwins February 19, 2013 - 8:31 am

Brittany it helps with both skin and digestion. here is a good article about it here

Miz February 19, 2013 - 7:34 am

Healthyleanfit February 19, 2013 - 11:39 am
