Day off for us both!
Lori’s Sunday recap:
I enjoyed a leisurely Sunday morning. The best way to end the weekend and getting refreshed for another busy, long week. To start my Sunday off even better was whipping up protein coconut waffles with some bacon and black coffee of course. Here is what I did for these protein waffles – 2 eggs with 1 tbsp coconut flour, 2 tbsp perfect fit brown rice protein, some vanilla and drops of liquid stevia (think I did a tablespoon of water). Cooked in my waffle maker and topped with coconut oil.
Apparently Jax had a rough night, and wanted to just relax all morning too.
Lunch was more romaine wraps. This time I filled my romaine leaves with half a can of salmon and sardines mixed with half avocado, topped with slices of brussel sprouts. SOOO good! And so easy to make too, love that!
Went for a family afternoon walk to get Jax some exercise and to enjoy the beautiful day.
Snacks that I enjoyed yesterday was kombucha, raw carrots and sugar-free marshmallows.
Dinner was grilled salmon with grilled parsnips, along with sautéed zucchini and some greens. Topped with coconut oil and black lava sea salt. A lovely Grammy dinner that I enjoyed by the fire.
Dessert was some beet marshmallows that I just cut into thin squares.

I felt great all day long. I did get a little tired while watching the Grammy’s, though think it was from sitting next to a nice warm fire. I got about 7-8 cups of water and took my supplements. I had a small bowel movement in the morning. Skin is still doing well and my back is getting better, very slowly but I am confident it will heal. Physically I am feeling very strong and motivated to really start increasing the intensity of my workouts again. I still feel that I am handling avocados well.
Michelle and I are in the process of figuring out what food(s) we want to bring back into our diet next. Hard decision as we miss many things.

Enjoyed a casual day with the family 😉 Love days like this…no worries, no agenda, just hanging out with loved ones.
Started my morning with my morning supplements and beet marshmallows (made mine a little thinner due to the pan I used) so good!
This combo of bacon, eggs, and either a carob waffle or pancakes is becoming my morning ritual for the weekends. Loving it!
Enjoyed a kombucha while hanging out with this crazy girl 😉
Worked on a new recipe.
Lunch was a little late, so I kept it small – enjoyed cooked bok choy with sardines and avocado. And enjoyed more cashew balls.
Dinner was grilled salmon, scallops, zucchini and raw arugula with coconut oil. Perfect!! My dad is so good with the grill.
I was still hungry so enjoyed more beet marshmallows. These are so addicting, good thing I finished them off .
Overall, I felt fine throughout the day. My digestion was okay. I did not have success in the bathroom like I have been, so that was a little upsetting to me. But I know my body will still be going through ups and downs, especially now as I am trying to bring more foods into my diet. It is hard to eat a limited diet for so long, therefore I am just doing my best to still listen to my body but also enjoy life again! I did not take any HCL pills yesterday, but did take my pre-dinner pills and magnesium and probiotic before bed. I got about 7 cups of water, for some reason I have trouble getting water in on the weekends.

Watched the Grammy’s and I thought they were great. Loved Alicia Key’s performance too! You’ve both just put me in the mood for waffles….tomorrow for breakfast, for sure. Both of you, have a great week!

I noticed u haven’t done juices in a while.. Do u notice any difference?

Kyra we still juice just not everyday. The shopping post should be up tomorrow, we are just about done with it.
Thanks so much. This will help a lot. I went shopping yesterdayand was ooverwhelmed at what to buy, how much, and the cost of things at wfm. I had my first egg yesterday and am excited that it went wel . I’m actually excited to start this gut healing diet, but have no idea how to budget and buy for this. How much do u spend a week on groceries.? Also, how often do u buy supps and do u know how expensive it is?

I went on the great Lakes website and they have a gelatin in a green can. Have u seen it? It is hydrolyzed, meaning it absorbs better and doesn’t congeal. What Do u think of it vs the red one?

Kyra well we are using the red one, we have not looked at the other one so cannot say. Pick whatever one you want, it is a good brand either way.
I really enjoyed seeing Mumford and Sons and Fun. perform. I just love their music, and nothing beats live performances. Amazing! 🙂

Such great eats! Loving the colour of those beet marshmallows!!! I enjoy a wide range of music – nothing heavy metal though… and only a bit of country!
