kale zucchini butternut squash quiche (paleo, gluten-free)

A simple recipe made from 4 ingredients to make one yummy quiche. Kale butternut squash zucchini pie. Gluten-free. Grain-free.Paleo.

Ingredients

  • 1 medium shredded zucchini (could use slices)
  • 34 cups chopped kale
  • 4 whole eggs
  • heaping cup of chopped butternut squash (was about 6oz worth)

Other add-ins that I did:

  • 1/2 tsp turmeric
  • 1 tsp cinnamon

Instructions

  1. Bake in a coconut oil greased baking dish, I used a 9 in pie shell.
  2. Bake in a 350 degree oven for about 30 minutes.
  3. Slice and enjoy.
