Sweet Potato Cauliflower Mash:
375 degree oven bake 1 whole head of cauliflower with 1 sweet onion. Both cauliflower and onion can be roughly chopped. Toss in coconut oil and spices (we used turmeric, parsley, black pepper, cumin). Bake for about 25 minutes. Let cool slightly before blending them up in blender with 1/2 cooked sweet potatoes, blend till smooth. We topped it with red onions that were cooked on a skillet in coconut oil.
