I started my Thanksgiving prep on Wednesday. I made two pumpkin pies (a family recipe), created a new recipe (an unbaked pumpkin apple pie layered cheesecake), and chopped and bagged all my vegetables. Thanks to my older sister Carrie for helping!
Then my Thanksgiving started bright and early as I had to get breakfast ready!
I made a cocoa gingerbread loaf along with 3 rounds of pumpkin donuts with a cinnamon sugar coating. Grapefruit and bananas were also consumed along with lots and lots of coffee!
My niece and I went on a short walk to help burn off the sugar rush we just enjoyed. haha
About 1 minute into our walk Joy decided she wanted to be carried to the park. So I picked her up and we walked all the way up to the park, where we spent a good time there swinging. She loves to swing!
Then it was play time before getting all the food and table ready to eat!
We had a good selection of food: ham, turkey, rolls, mashed potatoes, roasted veggies, buttercup squash, and plenty of drinks and dessert! I enjoyed two plate fulls! As I mentioned up top I created a new dessert for my sisters and I to enjoy -layers of: chocolate crust, pumpkin fudge, apple cashew cream, and pumpkin mousse.
I need to remake this again before sharing, as some of the texture was not quite what I wanted. But still delicious!
I did get the munchies later on in the evening (I blame the wine, haha) Enjoyed some more cocoa gingerbread and some mint chocolate! What can I say I love desserts!
Monday: 5 minute plank warm-up, zwow #42
Tuesday: new plankworkout (video coming soon), 3 sets of 10 reps push-ups, and 5 single leg squats on each leg
Wednesday: 12 minute workout of plank, bridge, and pushups
Thursday: 15 minute walk + playing with the niece
Friday: 8 minute plank with 2 minute bridge + 50 pushups
Saturday and Sunday: undecided
I kept my workouts short and simple this week as I was busy in the kitchen, playing with niece, and spending time with family.
How could I not want to spend time with this little one ?!?! 🙂
Hope you all enjoyed my quick Thanksgiving holiday recap! Lori will be sharing her holiday too soon!

yum! looks like you guys had quite a range of veggies too! my parents hate veggies lol (our only option was some steamed carrots) so i mostly ate my weight in meat! oh yes…and that fabulous flourless chocolate cake which was soooo rich!
I have to pick certain veggies for my family in order to get them to eat them haha, but they have gotten better with trying new things.
Joy is so cute!!!! I totally get why you love spending time with her — I bet she’s a little angel! 🙂
Thank you Kathleen! She can be a handful at times but adore her so much and love being able to spend time with her!
