pumpkin protein french toast waffles (gluten-free, dairy-free)

The perfect fall breakfast. Pumpkin french toast waffles that are protein packed. Gluten-free dairy-free waffles. Can be made grain-free. A healthy breakfast!




Egg-Milk mixture:


  1. Pre-heat your waffle maker.
  2. In a large bowl place your coconut flour, protein powder, pumpkin pie spice, baking powder and baking soda. Whisk till combined.
  3. Next place your egg into your dry ingredients along with your coconut oil and buttermilk, and whisk together. Make sure all ingredients are at room temperature!
  4. By this time your waffle maker should be ready to go.
  5. Scoop the waffle batter into the hot waffle maker. Set your waffle maker to whatever setting you like (we did ours in the middle) and let the waffles cook till the maker beeps to let you know they are done. Pop the waffles out of waffle maker onto a plate.
  6. As your waffles are cooking, you can make your egg coconut milk mixture. When waffles are done, place your waffles in a large bowl to let them soak up the yummy goodness that awaits them. We suggest letting the waffles soak in the egg coconut milk mixture for about 30 minutes.
  7. Once soaking is done, you may cook the french toast waffles on a skillet or place back in waffle maker (which we did not do, we did on the skillet).
  8. And waffles, especially french toast waffles just scream toppings! In our case we adore the sweetness of maple syrup with our waffles.
  9. Feel free to top with whatever you like!
  10. Topping ideas: coconut oil, maple syrup, honey, whipped cream, butter, yogurt, fruit, or whatever you like on your waffles.
