eat like twins

Looks like we all love some cookie dough brownie cake!

But I do eat more than cake 😉 Although I think desserts should be in it’s own food group, do you agree?

I have been loving fall/winter produce!

Roasted brussel sprouts, turnips, and beets! Coated in coconut oil with spices (cinnamon, coriander, chili powder, cumin)

Of course lots of squash eating!

Warm salads. Yogurt and cookies (new recipe coming soon). Pumpkin Fudge.

Wanted to share  a new thing I am loving Annie’s Horsereadish Mustard.

The other day I mixed 1/2 avocado, 1 tbsp nutritional yeast, and 2 tsp horseradish mustard.  I enjoyed inside it inside a nori wrap.

I finally got a kabocha squash to roast up!! After slicing the squash,I coated the slices with coconut oil, cinnamon, and cardamom!Baked it at 350 degrees in oven for about 30 minutes or till tender.


With all this cake, fudge, and squash eating I have been keeping dinners pretty simple.

Next I make my coffee.

Little bit later I come back to eat my carbs…in forms of winter squashes, probably the only meal that I get super excited for.

here are three other days meals: the bottom two I ate some squash with 1 tbsp of tahini, and the picture on top I enjoyed some squash with a side of chia seed yogurt pudding with more squash.

Been enjoying this bag of swiss chard from Trader Joe’s.

Lunches have been looking very similar lately with two whole eggs, a green (usually swiss chard or kale) sautéed in some coconut oil, along with shredded carrots and any vegetables I have on hand (like peppers, onions, broccoli, brussel sprouts, mushrooms)

Yesterday after my egg lunch I enjoyed a slice of pumpkin pie fudge! YUM. Wish I had a slice of brownie cookie dough cake… need to make that next.

During the late afternoon I have been enjoying some random snacks. Yesterday, I had an apple, little bit later came back to eat some cucumber with 1 tbsp tahini.

After that apple cucumber tahini snack, I was still a little hungry and wanted something warm. Michelle thought of making a simple hot cocoa with adding in some perfect fit protein to it. Brillant idea!  One thing I must say about hot cocoa for us is that we tend to only want a few sips then it ‘gets to us’ .

For some reason the rich cocoa flavor after awhile turns us off in a way, so we have been trying to make a version of hot cocoa that we can actually drink the whole thing. We use water instead of milk (non-dairy), as again the heaviness of milk tends to get to us, so water has been perfect. And now we have been playing around with how much cocoa we put in it, and seem to be liking 1 teaspoon worth. The addition of protein powder was  nice too! I actually drank the whole 2 cups 🙂 I was so happy.


The other day I enjoyed chia seed yogurt pudding with some pumpkin puree added to it and coconut butter, topped with yacon syrup and lots of cinnamon.  Similar to this pumpkin chia pudding recipe.

Here is 3 different nights dinners. Usually keep it simple with just a green, veggies, fish, avocado (one night had avocado pudding, picture on top) and coconut oil. And a few nights I add 1 tbsp of hemp seeds to my dinners.  Forgot how much I love them.

A few nights ago I enjoyed a thin mint cake and made myself another one last night! Can’t stop eating them!

Amber, Heather, and Tamikko so happy you all are enjoying the fudge.  And Sarah has enjoyed some fudge too!

So yay from the looks of our eats we have been eating like twins.

Who else likes hot cocoa? Anyone have a good recipe? Anyone else eating similar eats to us?  What is your favorite spice to coat your squashes with?

thanks for the shout out! i cut the fudge into really small squares, so my husband and i have been enjoying one or two pieces for dessert the last couple nights. it’s tasty!

i bought that chard mix last week! i sauteed it down with garlic and coconut oil. sooo tasty! i love hot cocoa. i usually do 1/4c almond milk + 1tbsp cocoa + stevia and a sprinkle of cinnamon or cayenne. pour hot water from my tea kettle over this mix and stir!

Geez, Do I ever make cooking hard! This weekend my plan is to roast squash, brussels sprouts and this ( ) and have good food at the ready to take to work. Good grief, I over think things and make it so complicated. Keep it simple! Sauerkraut report: It’s almost ready! Tasted it last night, it needs just a smidge longer to sit out and ferment. Want to ferment mixed veggies next. Doing the plank x4 a week for about 2 min. Love the plank and the bridge!

I just discovered a version of hot cocoa that might also work for you:

A mix of coconut meat, cacao powder, sweeter of choice (honey/dates/agave), vanilla, a dash of salt, and water blended in the Vitamix until warm.

I found this drink to be super-comforting and the coconut meat magic allows it to be pretty satisfying and sustaining too!

Hmmm….I think I’m going to make myself a mug (or two) of it now!

Love all the fall veggies! This post makes me want to go eat some squash! I need to make that pumpkin fudge! Looks so yummy! I just got my first batch of perfect fit and can’t wait to start experimenting with recipes with it!

I feel like we could be foodie triplets at the moment;) I’ve been eating a ton of squash, pumpkin, coconut oil, nut butter, cinnamon. Oh my, kabocha is simply the best squash! Have you had it with coconut butter. It beats all of the nut butter and kabocha combos!

I adore seeing your food as we have such similair (fabulous!)tastes, and I get all inspired & excited by the new-to-me combinations. E.g I need to try tahini on my squash ASAP:). And it’s nice to see turnips( I feel they are under-rated), iv been loving roasted parsnips so much lately, I can’t get enough of them.

My goodness, there is SO much amazing food in this post! Can I come move in with you? I’m not even sure where to start…How about we chat about that pumpkin fudge? Wow. Just as I was beginning to think I’d tried every pumpkin-fied recipe under the sun, I came across a new one. Can’t wait to try it! The kabocha squash is making my mouth water…I’m still working my way through several pounds of butternut, but once I do, I have a kabocha waiting to be roasted. I love the idea of eating it with tahini! The avocado + nori + horseradish mustard sounds amazing too. Love it all. <3 xoxo
