lots of cake

Glad everyone is enjoying Lori’s eats. She has had some yummy meals.

Today is officially our mom’s birthday.
But we celebrated it early this past Wednesday and I thought I would recap my day in the kitchen making up lots of goodies for her. Lori and I normally always give food as a gift to our family, pretty much  a given haha

I did start my day with 8 minute #plankworkout and a leg workout from the Tone it Up girls. Recovered with a simple green smoothie (2 stalks of kale, 1 large banana, 1 scoop brown rice protein, 1/2 lemon juice)

Did some computer work, chatted with Lori, and went to the grocery store to get some ingredients I did not have for making dinner for the family.

After running around I got back and enjoyed my next meal.

Roasted acorn squash (with cinnamon and coconut oil) and a side of goat yogurt.

I enjoyed this meal while reviewing all the recipes I wanted to make, and deciding where to begin.

I gathered all my ingredients…and of course some coffee too!

I decided to make mom’s birthday cake first! This was an idea Lori and I have had on our list to make for some time now, so I was very excited to finally make it! Although I was nervous too as I did not have a plan B if the cake did not come out.

As the cake baked away I decided to make raw cookie dough as it was going to be part of the frosting on the cake.  I followed our chocolate chip truffles but used cashews instead of pumpkin seeds and did not have cacao nibs so used regular chocolate chips (Enjoy Life Brand) More pictures of how I made these next wee.

Who doesn’t love raw cookie dough? Of course I sampled some 😉

Next up was peanut butter cookies, I made Ashley’s recipe (just omitted the ginger). So easy, only a few ingredients!!

Go  make these cookies! So good.

After all these sweets I decided it was time for lunch. I had few handfuls of fresh spinach topped with 1/2 avocado, shrimp, and a side of juice (beets, carrots, celery, cucumber, apple)

sampled some frosting and cake, you know to make sure it was good.…and it was!

Love when I have successful days in the kitchen! But never excited about the clean up part. haha Lori and I both are queens at making a mess in the kitchen, anyone else?

After cleaning up the dishes and taking pictures of my cake, it was time to make dinner for the family.

I made 3 different types of quiches for dinner. I had 3 1/ 2 slices. Sorry for the not so pretty pic

After letting dinner digest a little and my mom opened her gifts, it was time for cake!

So happy the cake came out! It was beyond delicious.

I shared some cake love on instagram too!

I have 300 pictures to go through, so hope to have recipe up next week! Sorry, but promise it will be worth the wait!

Great day full of family, food, and of course dessert! I went to bed with a happy full belly.

Yesterday I woke up ready for another day of work and eating, haha

I wanted to share a few highlights of my eats as I discovered a new way to bake squash that I wanted to share.

First mom and I had to test out one of her new toys!

Starbucks Verismo coffee machine. Mom (and I) loved it! Perfect cup of coffee, or two 😉

On instagram I shared how Lori and I “warm” our salads during these colder months. I know we have shown this before, but felt it was worth sharing again. As this is a great way to enjoy cold veggies on cold days.

I enjoyed fresh  juice with the last few raw cookie dough balls that I did not use in the frosting.

A great afternoon pick-me-up –> raw Juice and raw cookies!

Now for the a new way to bake squash instead of slicing and roasting.

I was already roasting up broccoli for dinner, so I just threw the whole squash in the oven too. I did put a few holes in the squash to let it steam. I had the oven on 350 degrees and to be honest I do not remember how long it baked for. But I flipped it every once in awhile, and tested it with a fork till tender.

Then I just sliced it up to enjoy, you can eat the skin of this one.

haha can you tell which plate is mine?  (and for those who might be wondering the reason I did not have any of this squash was because I had some leftover acorn squash earlier, as I try not to eat my carbs with protein)

Nice and simple dinner as we had to save room for more cake!

How lucky is your mom!? That cake looks amazing!!! You two are way too talented in the kitchen! I’m truly looking forward to the recipe! The fall and winter totally gets me in the comfort food mood.

My birthday is in the summer so I’m all about ice cream cakes and fro yo. Years ago, I opted out of cake and instead we indulged in a Friendly’s Watermelon roll!

I ate so much acorn squash last night roasted in coconut oil and spices! Happiness! But also discovered the deliciousness associated with roasting the seeds with oil and spices! What an addictive snack! Why no carbs with protein? Just curious….

Candice for us it is for digestion reasons. We have weak stomachs, so have to eat smaller meals and try to keep them simple.

Sweet dumpling squash is one of my favorites (besides kabocha). I usually roast it, just like I do any other squash.

And my favorite cake: carrot!!! 🙂

so my bday is coming up on the 31st…i think i found my cake makers haha 😉 i have never seen that dumpling squash before?! what does it taste like? oh i have to take the skin off squash or it literally wrecks my stomach ;/

i’m not really a big cake person but i like gingerbread or vanilla flavored things 🙂

Oh Melissa we would love to bake you a cake 😉 The dumpling squash has a slightly sweet taste, I find it lighter not as rich as squashes like kabocha. I too try to limit how skin I eat, I normally lightly peel it.

I LOVE all squash, but don’t really like the skin. Not sure why, I think it tastes like the ground or something ha.

I dislike you a tad, for flaunting that ridiculous cake in my face, & not delivering me any,(Scotland isn’t thaaat far away:p). It looks so so good! I wish I was part of your family, so I could receive your edible gifts too.
I love having a batch of healthy nibbles, like cookie balls, in the fridge to grab for a snack or random sweet tooth attack. And I am theee worst for making messes in the kitchen- I miss the days when my mum cleaned up after me*sigh*.

Thanks for the breakfast idea for tomorrow morning!! Acorn w coconut oil and yogurt!! PERFECT! I have an acorn squash that I’ve been wondering what to do with. Temp and time for roasting??? I think I’ll slather it in coconut butter too….. Cannot get enough of that stuff! It is love in a jar!
