high fiber buckwheat pancakes (gluten-free)

A healthy pancake recipe that is full of fiber from flax, coconut, and buckwheat groats. Gluten-free dairy-free high fiber pancake recipe.




  1. Place all dry ingredients into a bowl.
  2. Mix.
  3. Add in your stevia or sweetener of choice.
  4. Mix.
  5. Next add in your 2 eggs. Whisk.
  6. End with whisking in your coconut milk.
  7. You want a smooth batter.
  8. Scoop pancake batter onto skillet over medium heat on stovetop.
  9. Cook on both sides for a few minutes.
  10. Top with maple syrup and enjoy.
