Hello friends!

I’m starting to break out the fleece sweaters…anyone else?

Yesterday morning started earlier than normal in that Gary had to drive to Durham for work. Boy it is harder these days to get up when the bed is so warm and cozy.  Sipped on some water as I printed some things off the computer for Gary.

Worked out by myself. I felt like moving the body some, to help wake me up. I am starting to think about having some kind of pre-workout snack again, thinking thin mints or something. As I feel my body needs a little something before my morning workouts. I did this 5 minute #plankworkout +  2 sets of 5 more minutes of interval training using the same 30/30 second intervals on my Gymboss Interval Timer : one round being  bridge and push-ups, and other 5 minutes was backward lunges with front kick switching leg each interval.

Postworkout I enjoyed a green smoothie (unpictured) was 2 large bananas, little fresh basil, fresh ginger, perfect fit protein powder, and 2 handfuls of chopped kale. Smooth and delicious.

Snacked on a granny smith apple while I made my coffee and did some work. Got hungry around 11 or so and made myself something a little different than just my normal veggies and eggs.

Had a few pieces of romaine left so instead of chopping up like a salad I left them whole to stuff my egg veggie mixture in it.

Had acorn squash, cauliflower and shredded brussels sprouts , and eggs mixed together to fill  the romaine leaves with. I enjoyed every bite.

Been roasting up a lot of acorn squash lately, currently it’s my favorite.  I just slice the acorn squash, put some coconut oil, cinnamon, nutmeg, and smoked paprika on top. Place in 350 degree oven for about 30 minutes or so, till they are soft. YUM.  I really liked the little touch the smoked paprika brought to the dish.

My afternoon was filled with running some errands.

Trying to find a grey or orange dress for a friends wedding in two weeks, did not have much luck so looked at some purses. Did not find any purses I really loved, so the search continues.

Went to Pet Smart to get some doggy poopy bags. I am sure you all wanted to know that.  As I was there I browsed their doggy halloween costumes. I want to dress Jax up in this cute alligator costume, Gary still thinking about it.  I think he will look so cute in it.

It seemed to have gotten chiller as the day went on. I brought out my first scarf of the season to help keep me warm. Jax thought it was a good thing to jump and grab at. Luckily he found some sticks to play with in the yard.

Dinner was lettuce topped with sauteed red onions, lightly steamed broccoli and beets, half avocado, 1 tbsp coconut oil, shrimp and a slice of roasted pumpkin. Plus enjoyed one glass of wine.

And for dessert it feels like just about every night I make Gary and me a little dessert cake.

Love how Gary requests them 🙂

I usually just take our baked thin mint cake and make some variation of it. Last night I was craving chocolate, so sprinkled a few Enjoy Life Chocolate chips on top of my mini cake. And let the chocolate just melt in the cake, also added in some coconut oil on top. mmm so good.  though I need to try Michelle’s tahini and chocolate idea.

After hanging out with Gary and Jax while watching the Voice it was time for me to do some personal training studying. So far I have read the first 3 chapters, which were about the background of personal training, more about the NASM program, and the basics of exercise science (a lot of information in just a few chapters).  Now working on chapter 4, which is getting into more exercise metabolism.

In other news.

We have seen our amazing PT community grow from just 50 fans on facebook to over 4,600 and same with twitter with now over 5,000 followers, from a few page views to thousands. Honestly, we feel so blessed and honored to be touching and helping just one person’s life let alone thousands of people.

I eat kind of the same way as you guys. I try to go with my hunger, and usually snack my way through the day. I love salad wraps and put cocout oil on anything and everything. Its soo good!

I have to admit, I cannot stop thinking of this dinner you’ve posted. I thought about it a few times since I saw it on IG 🙂 I need shrimpies, so I can create it for myself 😉 Such a cool combo and it’s pretty! I love it

Yum. Those romaine wraps look awesome!
I love squash with coconut oil. Its basically the best thing ever.

I really appreciate your posts. You’re giving me ideas how I can eat differently. I grew up with meat & potatoes (I know!). It’s been challenging to change my thinking about food. I have noticed that I feel better when I don’t eat certain things…like gluten, sugar and too much meat. My husband and I have been drinking a green smoothie along with a hard boiled egg 6 days a week for a year. My lunches have improved…but still need to find easypeasy things to pack for lunch. Dinner is difficult because husband is a meat & potatoes guy. Trying to incorporate more veggies and beans. Exercise is tough. Mostly it’s with the space between my ears;p I know when I work out I feel better, but getting my mind on board when I’m tired is another thing entirely. Anyway…thank you for the work you do. xo
