avocado cauliflower socca pizza (gluten-free, egg-free, dairy-free, soy-free)

A healthy and very easy pizza recipe using socca as the crust. Gluten-free vegan avocado cauliflower pizza. Pizza crust made from buckwheat flour and garbanzo bean flour.

  1. Pre-heat oven to 375 degrees.
  2. Make your buckwheat flour. (Place buckwheat groats into Vita-Mix or food processor and blend till you get a flour like texture)
  3. You can use more garbanzo bean flour or another flour of choice if you would like.
  4. Place all dry ingredients into a large bowl and mix together.
  5. Then add in your 1 1/4 cups water and stir til combined.
  6. Set aside.
  7. Grab a 10 inch pan (a 12 inch pan would work too, just will be a thinner crust pizza base) place your olive oil into pan and place into hot oven.
  8. Let the oil warm-up for about 1-2 minutes.
  9. Remove from oven and pour your pizza socca batter into hot oiled pan.
  10. Place back into hot oven and bake for about 30-40 minutes.
  11. Let cool a little before flipping out of pan.
  12. Then top with your toppings and sauce of choice.
  13. We topped our simple socca pizza with our cauliflower sauce, arugula, zucchini slices, and creamy avocado sauce.
