Life has been pretty crazy…but all GOOD. We love our craziness. Michelle was a away for the weekend working with her new coach. She is still digesting everything as it was pretty emotional. I am so proud of her for doing this. Something else she has done that is outside her comfort zone. Love seeing her take her power back. Everything she is learning is going to help up-level our business. We’re super excited!

On top of that we’re in the middle of launching our Purely Fit Life program. The last time it will be open to join this year. AND I decided it was a good time to potty train Madison. Yesterday was day one and let’s just say lots of coffee and chocolate were consumed. I will admit it was harder than I thought. The morning session seemed to go well, but the afternoon didn’t go so smoothly. I wanted to give up at 3pm but Michelle reminded me not to give up. That Madison is doing great and each day it will get better.

Nothing like eating pancakes to get you through potty training.

Prep Time: 5 minutes

Cook Time: 10 minutes

Yield: makes 10 4 inch pancakes

Flourless Pumpkin Plantain Pancakes with pumpkin whipped cream

A cozy fall breakfast. Made with pumpkin puree, plantains, and eggs these waffles are moist, fluffy and ready to be topped with your 4 ingredient pumpkin whipped cream. A gluten-free grain-free paleo pancake recipe.

Ingredients

    Pumpkin pancakes
  • 130 grams green plantain (about 1 cup chopped)
  • 1/2 cup pumpkin puree (4 oz)
  • 5 eggs
  • 1/2 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 2 tablespoons coconut flour
  • a few drops of stevia (optional)
  • Pumpkin whipped cream
  • 1/4 cup pumpkin puree
  • 1/4 cup coconut yogurt
  • 1 tablespoon maple syrup
  • 1/8 teaspoon cinnamon

Directions

    Pancakes
  1. Preheat skillet over medium heat.
  2. Peel plantain.
  3. Chop plantain and toss into blender.
  4. Add in eggs into blender.
  5. Blend in remaining ingredients until smooth.
  6. Spoon some batter into a small circle in the nonstick pan.
  7. Give it a few minutes to cook on one side.
  8. Then flip and allow pancakes to finish cooking on the other side.
  9. Until you've achieved a slight golden-brown color.
  10. Continue this until all the pancake batter is cooked.
  11. Whipped cream
  12. Place all ingredients into a large bowl.
  13. Whip until smooth.
  14. Adjust sweetness to taste.
  15. Place whipped cream on top of pancakes.

        1. We’ll I don’t currently have the money yet for it. I put it on a credit card and I trust I will get the money in time to pay if off. I’ve been working on my money mindset for over a year.     1. The coaching is great and totally worth the money, she is devoted and passionate about what she does. Her cost vary depending on the package you get. It’s pricey but so worth it. And each session is individually based so whatever you need to work on she will help you get through it. A lot of emotions are involved but it really isn’t scary. That is how change happens. It’s how you face what is holding you back and getting to the other side. She helped me discover blocks I didn’t realize I had and reassured me on things I was questioning. Life changing!

    1. Glad you enjoy our recipes, unfortunately we don’t think this recipe would work with flax eggs. You could always try but with pumpkin it doesn’t always seem to work for us.

    1. I am sure you could find a pumpkin coconut flour pancake recipe on google. Not sure using coconut flour over plantains would result in the same results with this pancake as not sure how much flour to do for it.
