Our parents aren’t sure if the sun really comes out here in CA.  In San Francisco we didn’t see much sun and so far here at home sun has been a no show. Our parents are here just one more day so hopefully the sun will come out and play today.

Donuts used to be a big “no no” food of ours. Growing up we loved the powered sugar donut holes and occasionally had a Dunkin donut. Whenever we would enjoy them it was really hard to have just one or even just a few bites. We felt guilty afterwards like we did something wrong when in reality we were just eating food.  Even though we now don’t use food labels we know there are certain foods that are looked at as not being “healthy”. Donuts would be an example of that. We are big advocates for finding balance and moderation. From years of restricting and trying so hard to eat so clean we noticed our binge eating habits were still with us, even over doing it on healthy foods.

Now when we enjoy something like a donut we don’t feel bad about it. We enjoy it, savor it, and get back to our normal routine with no guilt. We worked on breaking our “all or nothing” mindset approach with food and focused on eating for life with a balanced, realistic healthy mindset and lifestyle. We love using dates to create caramel. They provide such great flavor and texture. Now it isn’t like your traditional caramel but we still think it is pretty darn tasty. Especially if you love dates like we do. We don’t have them often but when we do we really enjoy them.

  • Prep Time: 5 minutes
  • Cook Time: 10 minutes
  • Total Time: 15 minutes
  • Yield: 2 large donuts 1x

Ingredients

chocolate donut

  • 1 small ripe plantain or half plantain, 100g after being peeled (3 1/2oz)
  • 4 tablespoons protein powder
  • 3 tablespoons raw cacao powder
  • 1/2 teaspoon baking soda
  • few drops of liquid stevia (optional)
  • 2 tablespoons coconut oil, semi soft
  • 34 tablespoons water
  • 12 teaspoons instant coffee

caramel topping

  • 1 large medjool date, pitted
  • 1 tablespoon coconut butter
  • 2 tablespoons water
  • 1/8 teaspoon sea salt
  • 1/4 teaspoon vanilla extract (optional)

Instructions

  1. Preheat oven to 350 degrees.
  2. In a blender or food processor place plantain, protein powder, cacao powder, coconut oil, baking soda, stevia and instant coffee.
  3. Blend until well blended.
  4. Grease a donut pan with coconut oil.
  5. Fill donut pan with filling. Makes 2 large donuts.
  6. Bake donuts for 10-12 minutes.
  7. As donuts are baking begin to make caramel topping.
  8. In a small food processor or blender place one date, coconut butter and water.
  9. Blend until smooth.
  10. Add in sea salt and vanilla.
  11. Continue to blend.
  12. Let donuts cool before putting frosting on.
  13. Spread frosting on and sprinkle with more sea salt if desired.

Some ingredient replacements:

The vanilla and sea salt are optional. The salt adds in a nice depth in flavor with the date based caramel.

Add in as much instant coffee as you like with 1 teaspoon being a light mocha flavor and 2 teaspoons a more strong flavor.

is the protein powder essential? because that eliminates it from being completely paleo as most protein powders are made with milk protein (dairy is a no no on paleo) or soy protein which is another no no.

You can use any flour for the protein.
