Baked Blender Strawberry donuts that are gluten-free, grain-free and low in sugar. They’re easy to make and the glaze is made with fresh strawberries and coconut butter. So yummy! - Prep Time: 5 minutes
- Cook Time: 13 minutes
- Total Time: 18 minutes
- Yield: makes 2 large donuts 1x
Ingredients
Plantain donuts
- 6 oz (170 grams) peeled plantain, yellow-green one
- 5 tablespoons tigernut flour (25g)
- 1 teaspoon baking powder
- 2 tablespoons coconut oil, semi solid
- 1 finely chopped fresh strawberry
Strawberry glaze
- 1 tablespoon coconut butter
- 2 large strawberries
- 1/2 tablespoon maple syrup
Instructions
- Peel a large plantain and should weigh around 6 oz. Roughly chop plantain and place in blender with coconut oil. Puree until smooth.
- Next add in remaining ingredients.
- Continue to blend until smooth.
- Lightly grease donut pan with coconut oil. Fill donut pan. Makes 2 large donuts.
- Bake at 350 degree for about 13 minutes.
- For the protein frosting:
- Place all ingredients in a bowl and start to mix. Will need to add in some water until desired frosting consistency is achieved. Spread onto donuts.
- To make 4 ingredient plantain flour protein donuts:
- Place plantain flour, tigernut flour, protein powder and baking powder mixed together. Next, add in coconut oil and water. Stir until smooth. Batter will be a little thick but easy to work with.
- Continue to blend until smooth.
- Lightly grease donut pan with coconut oil. Fill donut pan. Makes 2 large donuts.
- Bake at 350 degree for about 13 minutes.
- Top with same protein frosting.
