No Bake Peanut Butter Chocolate Chip Protein Bites: delicious, easy to make, energy-boosting and super-filling. Made of just 5 simple ingredients, vegan, gluten free and low in sugar. Taste like a peanut butter cup cookie dough.

Using stevia allowed this recipe to be low in sugar as we can’t say sugar free due to the chocolate chips.

Best of all this is a raw bite recipe without a food processor or blender involved in the process. All you need is a bowl, a spoon or spatula and some arm strength for stirring.

This simple and healthy no bake peanut butter protein energy balls recipe is perfect for easy snacking on-the-go! With protein powder, peanut butter, chocolate, chips, coconut milk and stevia, these energy balls will keep you satisfied for hours!

Few notes about the ingredients.

You can use any nut or seed butter of your liking.

You can use any protein powder of your liking, just note make sure it is one you like the flavor as you will taste it. Or do all coconut flakes or gelatin if not a fan of protein power.

You can use any milk or non-dairy alternative of your liking to replace coconut milk. Also about the coconut milk, we usually use canned coconut milk but had cartoon coconut milk on hand.

Low sugar peanut butter chocolate chip bites

No Bake Peanut Butter Chocolate Chip Protein Bites: delicious, easy to make, energy-boosting and packed with peanut flavor. Made from 5 simple ingredients, vegan, gluten free and low in sugar. Taste like a peanut butter cup cookie dough.

  • Prep Time: 2 minutes
  • Total Time: 2 minutes
  • Yield: about 16 bites 1x

Ingredients

Scale
  • 1/2 cup (4 1/2oz) peanut butter
  • about 15 drops of liquid stevia
  • 2 tablespoons chocolate chips
  • 4 tablespoons (1oz) protein power (we used Perfect Fit Protein)
  • 23 tablespoons coconut milk

Instructions

  1. In a large bowl place peanut butter, protein power, stevia and chocolate chips.
  2. Stir.
  3. Next add in coconut milk and continue to stir until combined.
  4. Scoop using a small cookie scooper or spoon.
  5. Roll into balls.
  6. Enjoy at room temperature or store in refrigerator.
  7. Makes about 16 bites (depending on size scooper)

does this require regular coconut milk in the carton or the one in the can? Do you have nutritional values? BTW, what part of CA did you move to? How do you like it compared to NC?

We used it from a carton but any coconut milk should be fine. No nutritional stats. We are north of LA and so far we like it. We are along the coast and love being able to see the ocean everyday.

Looks so good, girls! I’m definitely gonna try this. Good thing that you don’t need a blender for this. I still haven’t got the Vitamix =( I also like that this recipe doesn’t use any syrups of any kind. Most energy balls/raw truffles have syrup in them to make them sticky and hold the shape. Can I sub the protein you used for hemp protein?
