Tasty fun and super simple to make cinnamon chewy cookies. This cookie recipe is made from 4 ingredients from coconut flakes, maple, cinnamon and protein powder. No flour. No eggs. No refined sugars.

We are on the hunt to find some new toys for Madison to play with on our long flight out to CA. We bought our one way tickets!!! Crazy.

Despite being totally off schedule, being away from Gary and Jax we are doing good. Really excited to fly out there for good. We are counting down the days. Madison has one more day of daycare left and then she has a doctors appointment on Friday. Then it is just playing until we fly out the following week.

When we were eating these cookies we noticed something about them.

Not only were they extra chewy and delicious, they reminded us of something. It took us awhile to put a finger on what exactly.

Then boom! It hit us. These cinnamon coconut cookies taste just like the classic oatmeal raisin cookies but minus the raisins and oatmeal. We found this to be pretty funny. 

Paleo and vegan coconut cookies that are full of healthy fat and protein. Cookies don't get any easier than this. All your need is 4 ingredients, a bowl to stir then bake in oven. Healthy easy chewy protein cookies. This cookie recipe is gluten free, grain free, dairy free and egg free and sweetened with maple syrup. These cookies reminded us of cinnamon raisin cookies but without the raisins and oatmeal.

Chewy cinnamon coconut protein cookies. Gluten-free. Paleo. Vegan.

Healthy and easy cookies that are made from just 4 ingredients. Paleo and vegan cookie recipe. Cinnamon chewy protein cookies that are made without flour, eggs and refined sugars.

  • Prep Time: 2 minutes
  • Cook Time: 15 minutes
  • Total Time: 17 minutes
  • Yield: makes 18 cookies 1x

Ingredients

Scale
  • 2 cups (6 oz) – coconut flakes
  • 8 tablespoons (2 oz) – protein powder *We used pea protein
  • 1 teaspoon cinnamon
  • 8 tablespoons maple syrup

Instructions

  1. Pre heat oven to 300 degrees.
  2. Place all ingredients into a bowl and stir together.
  3. Scoop cookies onto cookie tray.
  4. Gently press the cookies down to flatten.
  5. Makes about 18 cookies.
  6. Bake for about 15 minutes.

We used pea protein in our cookies but use any protein powder you like. Just know that each protein powder provides a different taste and texture so you might have to alter the maple syrup.

Awesome idea! I just made a batch and I had a really hard time getting it to stick together. So I ended up adding about a tablespoon of melted coconut oil. They came out great and are delicious. I would make these again, but I think it needs just a little pinch of salt.
