This comfort food classic is so amazing. Bacon grits shrimp and creamy spinach. What's not to like? Made with coconut milk making it dairy-free. We are not huge grits fans but this recipe is a must make! Dinner recipe for two.

We love supporting small family-owned businesses. Being in the food industry ourselves a few years ago with our bakery we know how hard it is to be in that industry. We normally don’t make grits. We like to save enjoying them when we go out to eat somewhere that is known for their grits.  Now we get to enjoy that restaurant taste right in the comfort of our own home.

Frankly, nothing beats a good home cooked meal made with wholesome ingredients.

This shrimp and grit bacon recipe is packed full of flavor and makes a hearty, satisfying meal with a dash of heat from red pepper flakes.

Shrimp and Grits with bacon and creamy spinach

Ingredients

Scale

Grits

  • 1 cup water
  • 1/2 cup coconut milk
  • 1/2 cup non GMO grits
  • 1/2 teaspoons sea salt
  • 1/2 teaspoons garlic powder
  • 1/41/2 teaspoons red pepper flakes

Creamy spinach

  • 11oz of fresh spinach
  • 1/2 cup coconut milk
  • 1 tablespoons arrowroot starch
  • pinch sea salt and black pepper

topping

  • 3 pieces of bacon
  • 1012 pieces of shrimp

Instructions

  1. Make creamy grits.
  2. In a pot bring 1 cup of water to a boil.
  3. Next add in grits and coconut milk.
  4. Add in spices.
  5. Cook for 10-12 minutes.
  6. While grits cook make creamy spinach and cook up shrimp and bacon.
  7. In a large skillet over medium heat cook bacon slices.
  8. Once bacon slices are done remove from heat and use the same pan to cook shrimp.
  9. Cook shrimp a few minutes on each side.
  10. Once done remove from heat.
  11. In a small saucepan place spinach in.
  12. Sautee spinach and add in coconut milk and arrowroot.
  13. Stir.
  14. Sprinkle in sea salt and black pepper.
  15. Remove from heat.
  16. On a large plate scoop grits, top with creamy spinach, bacon and shrimp.

Easy dinner to customize to your liking.

If you like more heat to your grits, add in more spice.

Living in the UK I’ve never tried grits, but it looks like something I could make with polenta corn………….. yummee xx
