Plantain Vegetable Medley sauteed in one pot makes this super simple to make to serve with dinner in minutes. Vegetables cooked in coconut oil full of incredible flavor!

  • Prep Time: 2 minutes
  • Cook Time: 10 minutes
  • Total Time: 12 minutes

Ingredients

Scale
  • 1 tablespoon coconut oil
  • 1 plantain, sliced or diced
  • 1 red pepper, sliced
  • 12 carrots, grated
  • 23 large handfuls of fresh spinach
  • handful of fresh parsley
  • 1 green onion
  • sea salt
  • black pepper

Instructions

  1. Place plantain pieces into a medium – large skillet with 1 tbsp coconut oil.
  2. Cook in oil for about 3-5 minutes over medium heat.
  3. Next add in red peppers and carrots.
  4. Continue to cook for a few minutes.
  5. Then add in spinach, green onion and parsley.
  6. Salt and pepper to taste.
