So our heater broke yesterday… the house is freezing.  We are all bundled up over here and luckily Michelle’s place has heat. Hopefully tomorrow we will have heat again once the AC guys come and take a look at it.

To warm us up these chilly mornings we have pancakes. Not just any kind of pancakes but mint chocolate pancakes with a creamy avocado mint fudge!

Perfect to serve with hot coffee and of course a sprinkle of chocolate chips. More chocolate the better, right?

The recipe is made from real ingredients from plantains to raw cacao to bananas to spinach. Yep you are having spinach for breakfast.

Mint Chocolate Chip Pancakes! A fun healthy breakfast or meal any time of the day. Made from ingredients and free of gluten, grains and dairy.

  • Prep Time: 5 minutes
  • Total Time: 5 minutes

Ingredients

Make gluten-free chocolate pancakes

Make avocado mint topping:

  • 12 tablespoons maple syrup
  • 1 large avocado
  • 1/4 cup coconut butter
  • Add a few drops of peppermint essential oil OR 1 tsp mint extract (adjust to taste)

Instructions

  1. When pancakes are done cooking let them cool.
  2. Make the mint filling by blending all the ingredients together.
  3. Then begin stacking pancakes with mint filling in the middle.
  4. Serves 2.

Sorry about that we added it to the filling. Recipe has been updated. But you can add some mint extract to the pancakes too if you really like mint flavor.

I looked at the recipe for mint fudge:
2 small bananas, about 5oz
1/2 cup coconut butter, 4 1/2oz
2 teaspoons vanilla
handful of fresh spinach
1 tablespoon maple syrup, 3/4oz

Am I missing something? Where is the mint? 🙂 This would probably taste like bananas, not mint, yes?

Sorry about that we just updated this recipe to have the mint. We used peppermint essential oil but you can use mint extract if you desire. Adjust to taste.

We did forget. We just updated recipe with it. We did use peppermint essential oil, but you can use mint extract if desired.
