It’s made with flourless paleo 4 ingredient waffles! They make the best base for a deliciously savory sandwich like this one. This loaded waffle sandwich is one of the perfect ways to use up your leftover turkey!

Besides time going by super fast, so are all the leaves from our trees. Seeing all the leaves fall is pretty but the clean up not-so-much. Since Gary reads the blog I better be honest here: I don’t help pick up the leaves anymore. I did the first few years, but this year we decided to just use the lawn mower to help with the leaves. So far it has been going great. I think.

We have always wanted to do a recipe like this. Not sure why. We just did.

And we are super excited to be sharing it with you.

You know we love our plantain bread. It would work brilliantly in this recipe, but we wanted to make waffles.

This is our first time really sharing a plantain waffle recipe. We used 4 simple ingredients. Actually this is another recipe that we have been wanting to share as we make them just about everyday.

For the past few years in our house we’ve been making our creamy broccoli casserole as a main side dish since every one loves it.

Therefore that was the “leftover” veggie we added to this sandwich.

You can use any veggie of your liking or whatever is leftover at your holiday meal.

2 ingredient cranberry jam. No more store bought cranberries for the holidays. Make this easy recipe.

We personally don’t eat jellied cranberries, but we do love cranberries.

After making our 3 ingredient cranberry butter we now did a basic recipe for cranberry jam.

We did a quick google search and found loads of cranberry jam recipes. All pretty much the same from cranberries to water to sugar.

We hope you enjoy our take on cranberry jam. It’s just a mix of water, a little maple and stevia as we do best with less sugar in our diet.

Adjust the sweetness to your taste. And just like in our cranberry butter add in a few drops of orange or lemon essential oil to add in more flavor.

We added gelatin into the cranberry jam to make it thick. This step is optional.

Leftover turkey cranberry jam creamy broccoli waffle sandwich.

Perfect way to use up leftovers from Thanksgiving. Paleo, gluten-free and grain-free savory turkey cranberry sandwiches made with homemade cranberry jam. Full of flavor and nutrition to keep you full and satisfied. Leftovers never looked so good.

  • Prep Time: 10 minutes
  • Cook Time: 10 minutes
  • Total Time: 20 minutes

Ingredients

Plantain waffles

  • 1 large green/yellow plantain (200g)
  • 4 eggs
  • 2 tablespoons coconut oil
  • 2 tablespoons coconut flour

Cranberry Jam

  • 1 cup fresh cranberries
  • 2 tablespoons maple syrup
  • *can add some stevia if you like it sweeter
  • 1/4 cup water
  • 1 tablespoon gelatin (red can as you want it to get a little thick)

Toppings

  • few slices of leftover turkey
  • lettuce
  • few scoops of any leftover veggies

Instructions

First make waffles.

  1. Place plantains, eggs, coconut oil and coconut flour into blender.
  2. Blend until smooth.
  3. Pour batter into waffle maker and let cook according to waffle maker directions.
  4. Once waffles are done set aside.
  5. Makes 4 large waffles.

Make cranberry jam

  1. Over medium heat place 1/4 cup water into a pot.
  2. Add in cranberries and bring to a boil for 10-15 minutes.
  3. Once cranberries get soft drain the remaining water (if desired).
  4. Stir in maple syrup.
  5. Add in gelatin if desired to make a thick jam.
  6. Stir. Set aside.

Next assemble sandwich.

  1. Place one waffle down and layer with turkey, lettuce, cranberry jam and leftover veggies of choice.

Hi. just wondering if it’s 200 grams of peeled plantain or if you weighed the plantain before peeling? Also, how many waffles did this make? I know it depends on the size of the waffle maker cavity, but just wondering. Looks delicious! Can’t wait to try it.

Yes the 200g is for when the plantains are peeled (so no peel). It usually makes about 4 large waffles.
