It is a snap to prepare this eye popping butter.

This cranberry coconut butter is the perfect side dish to accompany your holiday table that’s little a sweet and tangy.

If you don’t like cranberries, you can use any berry of choice. Of course it wouldn’t be cranberry butter, haha.

We love how rich and creamy this butter is. The fresh cranberries blended beautifully with the coconut butter.

We used our homemade coconut butter but you can use store bought too. We recommend softening it to make it easier to whip.

Also, we love keeping our recipes low in sugar when we can so we used stevia in this butter recipe.

If you don’t like stevia, please use maple syrup or honey until desired sweetness is achieved.

To make this recipe even easier we did not boil the cranberries. We wanted a fast recipe so we decided to keep the cranberries raw with the coconut butter. It turned out wonderful.

Quick and simple dairy-free low sugar cranberry butter. Not your average butter. Coconut butter provides a smooth and buttery feel to the cranberries. Used stevia to keep it low in sugar. You’ll love this sweet and tart cranberry butter on breads and muffins. Made without boiling the cranberries for a fast raw buttery spread.

  • Prep Time: 5 minutes
  • Total Time: 5 minutes
  • Yield: about 3/4 cup of butter 1x

Ingredients

Scale
  • 1 cup of fresh cranberries
  • 1/4 cup of coconut butter
  • few drops of liquid stevia, to taste
  • *optional:
  • add in a few drops of essential oils like orange or lemon if desired

Instructions

  1. Rinse your fresh cranberries.
  2. Make up coconut butter if you are using homemade.
  3. Place in blender fresh cranberries and coconut butter.
  4. Blend.
  5. Add in stevia.
  6. Continue to blend until smooth.
  7. Add in more sweetness if desired or in some orange or lemon.

We are so glad we decided to make this up. We mean… it’s pink!  How could you go wrong?!

Hey! Looks beautiful. How bitter is it though? I’ve never tried raw cranberries but have always been under the impression that they’re quite bitter.

well, with the addition of some stevia we felt it balanced out nicely, especially with coconut butter which as a little natural sweetness to it. But if bitter is a concern you could add in maple syrup over stevia, or add in some orange or lemon to help.

well, you could try using sunflower seed butter, it will change the final taste.

I just made it. Its quite yummy. I figured out quickly to make sure the cranberries were warm so the coconut butter wouldn’t harden. Do I keep it in the fridge? Will the coconut butter harden into little bits if I Do?
