If you love chocolate and pecans you will love these cookies.

To be honest, we haven’t actually had chocolate pecan pie or traditional pecan pie. Okay, maybe we’ve had just one bite, but that was it. Our mom loves it. Not sure why, we just never got hooked on pecan pie. We like pecans but aren’t in love with them like we are tahini. We love our healthy fats but we aren’t huge on having a lot of sugar (our skin and hormones don’t like it), which you will find in traditional pecan pie and cookie recipes.

We wanted to create our own version of enjoying this classic holiday dessert without all the sugar.

These super simple pecan cookies are delicious in their own way. The chocolate coating on the outside sweetened the whole cookie enjoyment process.

We felt like we needed to change it up. Pecans are everywhere so we thought let’s make pecan cookies.

Of course if pecans aren’t your thing–we totally get it.

You can use any nut or nut butter to replace the pecan butter.

If you want to keep this recipe vegan friendly? Use maple syrup instead of the honey and use any flour for the gelatin.

Chocolate covered pecan butter cookies

Healthy easy chocolate pecan pie butter cookie recipe. 7 ingredient chocolate pecan cookies that are gluten-free, grain-free, egg-free, soy-free, and paleo friendly. Low sugar cookie!

  • Prep Time: 10 minutes
  • Total Time: 10 minutes

Ingredients

Scale

Pecan Cookies

  • 1/2 cup pecan butter (raw or roasted)
  • 2 tablespoons gelatin
  • 2 tablespoon coconut flakes
  • 2 tablespoons honey
  • 1/4 teaspoon cinnamon or vanilla
  • 1/4 teaspoon sea salt (optional)

Chocolate Sauce

  • 4 tablespoons coconut oil
  • 8 tablespoons raw cacao
  • few drops of stevia

Instructions

Make cookies

  1. Pre heat oven to 350 degrees.
  2. Place all ingredients into a bowl.
  3. Mix together until it forms a dough.
  4. Scoop onto baking tray.
  5. Bake for 8-10 minutes.
  6. Let cookies cool on cooling rack a few minutes.
  7. As cookies cool make chocolate sauce.

Chocolate sauce

  1. Mix 4 tablespoons cocoa with stevia and 2 tablespoons coconut oil.
  2. Dip and coat half the cookies.
  3. Make more chocolate sauce.
  4. Dip and coat the remaining cookies.
  5. Place on parchment paper and place in fridge to set.

Nutrition

  • Serving Size: 14 - 16 cookies

Enjoy with a gingerbread latte or Irish coffee like we would do.

These cookies look really good. I have actually never had a pecan pie before. I have always wanted to but never have made one. Maybe ill make these cookies for a healthy alternative on Thanksgiving this year. 🙂 Thanks for the recipe.

These are tagged as vegan, and, while you give an alternative for the honey, you neglected to do the same for the gelatin. Any suggestions?

Hi. What’s the measurement for the pecans? It only says 1/2. I’m assuming that means 1/2 cup.

I use hazelnut butter since I looked EVERYWHERE for pecan butter and couldn’t find any. It tastes great! The chocolate sauce is really hard to make. It takes so long for the oil to soften enough to make it into a liquid sauce. And even with more than a few squirts oscar Stevia, it’s still quite bitter. I like it, but not everyone would. Also, I only El need to make half of the sauce to cover all of the cookies.
