Now that the holidays are close and pumpkin is everywhere,ย we thought pumpkinย brownies sounded pretty darn good.

How did we come up with this recipe?

Weย know a lot of you cannot find or get plantains. We wish we could send you some. Maybe we should open up a side business haha.ย 

We usually always make our flourless plantain brownies.

And one day we thought why don’t we try using a nut or seed butter to replace the plantains.

To the kitchen we went…and it worked.

We first made it with peanut butter. This was when we were back home in FL. Our mom loves chocolate and peanut butter.

Why not make brownies, right? Our thoughts exactly.

And honestly we’ve made them about 5 more times since then.

We have tried…

  • tahini. Worked.
  • pumpkin seed butter. Worked.
  • sunflower seed butter. Worked.
  • peanut butter. Worked.

Really any nut or seed butter would work. Change it up every time like we do.

Flourless peanut butter pumpkin brownie recipe

If you love peanut butter you’ll love this pumpkin brownie recipe.

These protein pumpkin brownies are made from 6 main ingredients, which you probably have on your shelf.

  • Nut or seed butter
  • Cocoa or chocolate protein
  • Maple syrup
  • Coconut butter
  • Coconut oil
  • Pumpkin puree

Notes about the recipe:

To keep it 100% paleo do not use peanut butter and use your favorite protein powder or cocoa powder.

For the protein powder we used chocolate pea protein.

These are super rich in chocolate as we used chocolate protein powder. If you desire a rich chocolate brownie use cocoa powder instead of using chocolate protein powder.

If you don’t like fudgy moist brownies do just 4 tablespoons pumpkin instead of the 6.

These brownies are delicate so make sure they cool completely.

A healthy brownie recipe that is free of grains, gluten, dairy and eggs. Flourless protein pumpkin brownies made from nut or seed butters. Even have peanut butter pumpkin brownie recipe.

  • Prep Time: 5 minutes
  • Cook Time: 48 minutes
  • Total Time: 53 minutes

Ingredients

Scale
  • 3/4 cup nut or seed butter (6 3/4 oz)
  • 2 tablespoons maple syrup (1 1/2 oz)
  • 2 tablespoons coconut butter (1 1/4 oz)
  • 4 tablespoons coconut oil, liquid (2 oz)
  • 6 tablespoons pumpkin puree
  • 8 tablespoons cocoa powder or chocolate protein powder ( 2 1/2 oz)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice

Instructions

  1. Preheat oven to 350 degrees.
  2. Place all wet ingredients into a Vitamix blender.
  3. Blend together.
  4. Next add in dry ingredients and blend.
  5. *The batter will be different than most brownie recipes. It is thick not runny.
  6. Grease well with coconut oil a 9×5 bread loaf or 6 in or 8 in circle pan.
  7. Spread batter into pan.
  8. Bake for 10-12 minutes.
  9. Let cool completely before removing from pan.
  10. Once cooled flip the pan.
  11. Cut and enjoy.

Not sure what I did wrong but the brownies came out raw…… like unable to hold their shape. They can’t be cut in squares. They can only be eaten with a spoon, which is what I’m doing, but I’m just wondering why it didn’t work. I used peanut butter for the nut butter and cocoa powder instead of protein powder.
They’re delicious so I’d love to make them again. Should I add some eggs?

Not sure what happened. They are delicate brownies, maybe try just 4 tablespoons pumpkin.

Just replace the coconut butter with more nut or seed butter that you are using.
