We had to come up with a new way for Madison to enjoy some veggies and leafy greens.  Like most moms it’s a struggle to get kids to eat foods that are green. Hey, it can be challenging for some adults too.

But every kid likes bread right…every kid likes to have ‘super’ powers…right?

We tweaked our paleo bread recipe to make green bread, or what we call our HULK bread.

A bread recipe full of healthy fats and protein. Simple to make, which is great for a busy mom!

A bread recipe your whole family will love.

Make sure you use your favorite protein powder as it will alter the taste. We used pea protein (Garden of Life brand).

If you don’t want to use protein powder you can use any flour you like.

We know the color green probably will get stares just like green smoothie mustaches right? haha

But if you call it something fun like HULK BREAD like we do we have a feeling it will win people over.

To help keep the bread green we used pumpkin seed butter.

Okay maybe you’re not a bread person.

Green “HULK” bread. Protein paleo bread recipe.

Fun and healthy way to enjoy bread filled with healthy fats and spinach. A great way to get your kids to eat veggies. Gluten-free grain-free dairy-free quick bread.

  • Prep Time: 5 minutes
  • Cook Time: 25 minutes
  • Total Time: 15 minutes
  • Yield: 9x5 bread loaf 1x

Ingredients

Scale
  • 1 cup pumpkin seed butter (9oz)
  • 4 eggs
  • 2 tablespoons maple syrup
  • 1/4 cup protein powder of choice (we use pea protein)
  • 2 tablespoons coconut flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoons baking powder
  • 1/2 teaspoons sea salt
  • 1 cup of spinach

Instructions

  1. Preheat oven to 350 degrees.
  2. Grease a 9×5 bread loaf with coconut oil.
  3. In a blender add in pumpkin seed butter, eggs and maple.
  4. Blend.
  5. Next add in dry ingredients and spinach.
  6. Continue to blend until smooth.
  7. Pour mixture into bread loaf.
  8. Bake for about 25 minutes.
  9. Slice and store in refrigerator.

Nutrition

  • Serving Size: gets about 12-14 slices

I look forward to trying this. I add greens to almost everything we make (my boys are always dumbfounded when something comes out of the blender or food processor and it isn’t green), but I’ve never thought about adding them to bread. Fantastic!

Thanks for the recipe, just made it, its looking good. Gonna try it when i come back from the gym. Only issue is i have got problems taking every last bit of the thick batter from the blender. Any tips to help with that?

Hey there. So I found this recipe when trying to search kale bread. I substituted kale for spinach and that was a huge mistake. The kale totally overtook the flavour of the recipe…but kind of tasted like gross kale and peanut butter getting old (I used peanut butter, since I didn’t have fancy pumpkin seed butter). Also, it was embarrassing since I tried to serve it at a picnic without tasting in advance. Whoops! That’s the school of baking hard knocks right there! Someone did identify that the texture was right though, which made me feel the recipe still had potential. So talking to a friend about it later, I was told that since kale is a cruciferous vegetable, it will have that bitter taste. We were wondering if spinach would do the same thing? Will the bread then have a spinach taste to it? Or do you think the spinach is sweeter, so it may not overtake the flavour as much? I just tried it with little chopped apple pieces because I was too afraid to try a green after the kale experience. It came out ok, though not quite sweet enough (oddly enough). So I may add more maple syrup or honey on the next batch.

I’m also considering: do you think almond meal or a ‘regular’ grain flour could be substituted for some of the nut butter and still work out ok? Any experience with this? It’s very nutty with peanut butter, which is nice in some circumstances, but wondering how to reduce it a bit. Obviously the grains would not be paleo…

Your site loads extremely slow by the way (it’s not reasonable, even with the media resources needed). It has too many resources to fetch. I strongly recommend you reduce the ads, embeds, and requests to the server (local or not). You’l probably get better revenue that way anyway, not to mention a better user experience. Or go with AMP ads. Just some advice from my Internet marketing background. Totally not trying to sell anything. Just want to make the web a better place.

Yes spinach will be different than kale as kale is much stronger. This recipe isn’t made to be a sweet bread. If you are looking for more of that not sure this is the recipe for you.
