The star of this recipe is the mint cookie dough topping.

We took our beloved 5 ingredient raw chocolate chip cookie dough dip and just made it mint.

Brilliant!

Now we use natural green food coloring so it’s not the POP of green that you might typically see over on Pinterest.

We are oaky with that.

It is more of a soft, rich green.

{no bake} mint brownie cookie dough pie

A sinfully delicious no bake mint chocolate chip cookie dough brownie pie. A slice of heaven on a plate for those mint chocolate lovers.

  • Prep Time: 15 minutes
  • Cook Time: 1 minute
  • Total Time: 16 minutes
  • Yield: Makes 8 slices 1x

Ingredients

Scale

Top layer

  • 1 recipe of cookie dough dip
  • few drops of chlorophyll (to make it green)
  • few drops of peppermint essential oil or extract (to taste)

bottom layer

  • 1/4 protein powder or almond flour
  • 1/4 cup fine coconut flakes
  • 1 1/2 cups cacao powder
  • 2 tablespoons coconut butter
  • 67 tablespoons maple syrup

Instructions

  1. Make your raw brownies by mixing all the ingredients in a bowl. It is thick. Spread them into 6 in – 8in circle lined pan. We used a spring form pan, which is what we recommend as it makes getting the pie out easier.
  2. Once brownie is spread out. Make the mint cookie dough dip. Add enough green chlorophyll drops to desired color and mint to taste.
  3. Spread cookie dough on top of brownie layer.
  4. Place in fridge to set for a few hours.
  5. Remove pan from fridge and then take pie out of pan.
  6. Slice and enjoy.
