Well, our days continue to be one big blur over here. Madison seems to sleep her best from 7am to 9am, so that is usually when I sleep too. With me sleeping in until 9am my mornings don’t really start until 9:30am after I finish nursing her. It feels so weird to be sleeping in when I love my mornings. I am a morning girl. Not sure yet if Madison will be or not.

Like we mentioned yesterday we can’t seem to stop making cookies over here.

One can never have too many cookies recipes right?  Especially if they contain pumpkin and minimal ingredients.

Who doesn’t love a good ‘healthy” cookie to enjoy.

Just like with our 4 ingredient peanut butter cookies, these cookies have a ridiculously short list of ingredients and bake for only 10 minutes!

Doesn’t get any better than that 🙂

Pumpkin cookies made in minutes. Perfect for your Fall treat!

No flour needed. No processed sugars needed.

These are great made with maple syrup or even stevia.

If you want to use stevia to sweeten your cookies – omit the maple syrup and coconut flakes.

These cookies can be enjoyed raw as there is no dairy or eggs!  Due to the pumpkin these cookies are more soft and moist and not as crunchy but taste AMAZING!  They literally melt-in-your-mouth! They have a lovely pumpkin buttery flavor.

These cookies are yummy warm out of the oven or cold straight from the refrigerator.

Here is your recipe for 10 minute pumpkin cookies made without flour and eggs.

5 ingredient pumpkin cookies (grain,gluten,dairy,egg,soy free)

Yummy pumpkin cookie recipe. Made from just 5 ingredients and can be made sugar-free! 10 minute pumpkin cookies that are gluten-free, grain-free, egg-free, soy-free, and paleo friendly.

  • Prep Time: 2 minutes
  • Cook Time: 10 minutes
  • Total Time: 12 minutes
  • Yield: makes about 8 cookies 1x

Ingredients

Scale
  • 1 tablespoons maple syrup
  • 2 tablespoons coconut flakes
  • 2 tablespoons gelatin
  • 1/2 cup coconut butter
  • 2 tablespoons pumpkin puree

Instructions

  1. Pre heat oven to 350 degrees.
  2. Place all ingredients into a bowl.
  3. Mix together until it forms a dough.
  4. Scoop onto baking tray.
  5. Dough is thick.
  6. Flatten cookies if you desire a flat cookie.
  7. Bake for 10 minutes.
  8. Let cookies cool on cooling rack a few minutes.

Notes

Can enjoy cookies raw for a yummy dough ball cookie or dehydrate them for a few hours.

Substitution ideas:

We used coconut butter – any nut or seed butter would work just fine.

For the gelatin you can use any protein powder of your liking or you can try any ‘flour’ of your liking.

For the coconut flakes you can use a nut meal.

For the maple syrup you can use stevia or coconut nectar.

oh inlove pumpkin. And coconut butter – I love this ingredient but it’s so hard to find sometimes! Do you think agar agar would work in place for gelatin? I know you said protein powder would work well here as well. Thanks for sharing and I hope you get your mornings back soon!!

Coconut butter is so easy to make yourself 😉 Do protein powder or nut flour over agar for the gelatin.

ive never had coconut butter. It sounds Iike a lot of butter. Are these good for you? Maybe coconut butter is better for you than regular butter?

Jenn it depends on the person, some people can handle more fats than others. Regular butter is good to you if you can handle dairy. We do our best to limit our dairy. Coconut butter is full of essential amino acids, calcium, and magnesium, plus it’s healthy fats, so keeps you full longer. It has lauric acid, which boosts immunity and destroys harmful bacteria, viruses, and funguses. And coconut can help boosts your metabolism. No need to fear your fats 😉

These were very good but they were also rather crumbly. I put them in the fridge and they hardened a little but still had to quickly pop them in my mouth. Which wasn’t a problem! Maybe I would just eat them raw if I made them again.

Glad you enjoyed the cookies, maybe add a little more maple syrup or make sure your coconut butter is more wet not dry. If it is dry it will be crumbly. xoxo

We used the green, but we have had people tell us they used the red and it worked okay (provides more a chewier cookie)

Ok so i’m New to AIP Paleo cooking… I have tried for two days to make different cookies including this one just now, but I’m sad to say I followed eactly and they just ran into a liquid and filled the cookie sheet???
What am I doing wrong please help, husband ready to jump ship!!
