Yesterday was an overall good day. Michelle’s skin is hanging in there. She is continuing her epsom salt, sea salt and baking soda baths. They continue to ease the pain, but for some reason her neck is inflamed and is red and itchy. We cannot figure out why this is happening. It has been going on for a few weeks and has not changed. So, here we go again to the drawing board to figure out what the hell is happening to her skin. Her first doctor appointment is a week away – sure wish it was sooner! We are both hanging in there. She is such a fighter. She is really focusing on healing her mind and emotions, which has been hard.

This fig sandwich was everything we were wanting and more! Promise it’s that good. Stop what you are doing (that of course is if you are not driving, though you shouldn’t be reading this while driving) and go make this sandwich now! Or make two! You will want seconds 😉

This sandwich will be ready in under 20 minutes, unless you have some plantain bread already stocked up in your freezer. Which we know many of you do…great idea by the way!

So easy to make this sandwich and sadly takes less time to eat it.
Michelle is avoiding eggs to see if that helps with her eczema (side note, it has been a week since she has had any eggs and no major improvement, but we are staying hopeful). So in order for her to enjoy this delicious sandwich we resorted to an old favorite bread recipe of ours – mung bean socca. Oh yes that recipe is from our old days over at pure2raw.

Don’t eat dairy? Feel free to use any dairy-free cheese alternative. It will still make a wonderful satisfying sandwich.
A throwback story you may not know about us. Over 6 years ago we started our food career as personal chefs!! Yep, we made food for other people. We loved it. But it was a lot of work — organizing, prepping, etc. We had wonderful clients and it was sad to move on from that business, but luckily life works out. We love what we do now even more. The reason why we brought this up is this sandwich was a very popular request on our menu.
