We are so happy to hear that so many of you like using essential oils too. We are both excited to see how they help with Lori’s labor. It sure will be a learning experience for us both.

Yesterday was an overall good day. Michelle’s skin is hanging in there. She is continuing her epsom salt, sea salt and baking soda baths. They continue to ease the pain, but for some reason her neck is inflamed and is red and itchy. We cannot figure out why this is happening. It has been going on for a few weeks and has not changed. So, here we go again to the drawing board to figure out what the hell is happening to her skin. Her first doctor appointment is a week away – sure wish it was sooner! We are both hanging in there. She is such a fighter. She is really focusing on healing her mind and emotions, which has been hard.

If you are following along with our daily facebook dinner challenge you would have seen us mention this recipe already on Monday. It was our dinner that night.

This fig sandwich was everything we were wanting and more! Promise it’s that good. Stop what you are doing (that of course is if you are not driving, though you shouldn’t be reading this while driving) and go make this sandwich now! Or make two! You will want seconds ;)

This sandwich will be ready in under 20 minutes, unless you have some plantain bread already stocked up in your freezer. Which we know many of you do…great idea by the way!

Don’t have access to plantains? You can use our low-carb parsnip bread or sweet potato flatbread. Or if you are real adventurous try this sandwich with our almond butter bread.

So easy to make this sandwich and sadly takes less time to eat it.

Michelle is avoiding eggs to see if that helps with her eczema (side note it has been a week since she has had any eggs and no major improvement, but we are staying hopeful). So in order for her to enjoy this delicious sandwich we resorted to an old favorite bread recipe of ours - mung bean socca. Oh yes that recipe is from our old days over at pure2raw.

Other option for egg-free bread are socca and our egg-free plantain flatbread.

Don’t eat dairy? Feel free to use any dairy-free cheese alternative. It will still make a wonderful satisfying sandwich.

A throwback story you may not know about us.  Over 6 years ago we started our food career as personal chefs!! Yep, we made food for other people. We loved it. But it was a lot of work — organizing, prepping, etc.  We had wonderful clients and it was sad to move on from that business, but luckily life works out. We love what we do now even more. The reason why we brought this up is this sandwich was a very popular request on our menu.

We are thrilled to be sharing one of our favorite sandwich recipes here with you today so you can enjoy it too!

Prep Time: 5 minutes

Cook Time: 15 minutes

serves 1

A single serving sandwich that is gluten-free and grain-free. Fig goat cheese basil arugula balsamic onion sandwich for one! A healthy sandwich that can be enjoyed for lunch or dinner. Egg-free bread options mentioned above!

Ingredients

    individual plantain bread
  • 2 eggs
  • 1/2 plantain (100 grams)
  • 1 tbsp coconut oil
  • sandwich ingredients
  • a good slice of goat cheese
  • 3-4 figs
  • a few fresh basil leaves
  • handful fresh arugula
  • 1 tablespoon balsamic vinegar
  • a few slices of red onion

Directions

    to make individual plantain bread
  1. Place plantain in vitamix blender with 2 eggs and 1/2 tablespoon oil.
  2. Blend until smooth.
  3. Grease 6 in pan with 1/2 tablespoon oil and bake at 350 for about 15 minutes.
  4. while the bread bakes:
  5. Next cook up onions in a little coconut oil.
  6. When onions start to brown add in the balsamic vinegar.
  7. Remove from heat.
  8. Slice up figs.
  9. When bread is done baking let cool a few minutes.
  10. Then slice bread in half.
  11. Begin to layer sandwich.
  12. Carefully place sandwich on skillet to melt cheese.
  13. Or may eat chilled.

    I have a thought towards Michelle’s skin condition… Some people have a grave intolerance to chlorine, which can cause the type of symptoms she is having. It can also be very frustrating to figure out that something that is in the water we wash our clothes in, bathe in, drink, etc, can be the root cause of making us sick. It’s not a super common allergy, but I have seen it once before.
    I would recommend getting a filter for the shower and purchasing a good drinking water filtration system to help lessen the presence of chlorine in the water.
    Berkey is great for drinking water filtration.
    I’m a Holistic Nutrition Student who is almost done with School, and I’d be happy to help at all if I can, no one should have do deal with what she is going through!
