HAPPY 4th of July friends!!
Our trip down to Duck Key started on Tuesday morning.
We grabbed some goodies to snack on in the car.
Made a random recipe — parsnip bread. Yep parsnip bread. We blended eggs, coconut flour, coconut oil and parsnips together to create a fun random bread.
A fun twist on our plantain bread.
We each ate a whole container of raw kale chips. So good.
It’s a salad-to-go right?
Little 4 hours later we arrived at our destination.
Snacked on a slice of our peanut butter chip blondies upon arriving. Delicious.
Watched the USA men play in their game for the world cup.
Michelle enjoyed some cocktails. I (Lori) got a frozen lemonade which I took just a few sips as it was way too sweet for me. I started getting little too hot and the mosquitos were attacking me so I left to head back to room to hang out with the rest of the family.
Michelle’s cocktails –> Mint Lime Cooler (it was made with coconut water!) and she enjoyed 2 chocolate martinis
After sweating in the hot sun watching the first quarter of the soccer game, they realized there was an inside bar. They moved inside and I came back down to enjoy the end of the game with everyone. It was a good game even though USA lost. Did you watch the game?
Ordered some dinner and enjoyed the beautiful evening.
Next morning we whipped up our bulletproof coffee while the sun came up.
My niece watched me make Michelle and I’s protein mush for breakfast. She was so interested in what we were having, haha, not sure we have her convinced it’s good.
After coffee it was pool time.
Baby M wanted to get in.
It was early enough in the morning that we had the lagoon to ourselves. It was nice.
After some play time in the lagoon our niece wanted the pool so she could jump.
And jumping she did.
Jumping is her favorite.
Baby bump poolside
Then we went for a walk as our niece took her nap.
Stopped by the hotel gym to do some planking.
Later that afternoon we went back to the pool while we waited for the boys to get back from fishing.
Life is better with family!
Michelle made up a kombucha cocktail (vodka with kombucha).
Dinner was freshly caught and grilled fish with veggies and rice!! Amazing!
Low-sugar raw chocolate cheesecake (recipe in our purely classic cookbook) for dessert.
And more slices of low carb chocolate chip bread.
More to come…
What are your plans to celebrate July 4th?
What have you been enjoying lately? Did you watch any soccer? Tennis?
