Hello friends,

Do you ever relive family memories? Do you like recreating old family favorite recipes into something a little healthier? We sure do.

We grew up with making recipes from the Pillsbury Complete Book of Baking (published in 1993). Our second oldest sister got the book and she started baking. She would invite us in to taste and sample her yummy treats. She was very talented. It was through her and her love for baking that we began our baking journey.  And we’ve never looked back.

There were a few family favorites that we would make over and over again… pumpkin bars, sweet cinnamon quick bread and cookies ‘n cream cake (mmm we need to recreate that one). And there were a few bread recipes that we always enjoyed. Particularly a herbed oatmeal pan bread that was always a lovely addition to our dinners.  These rolls were topped with this herb butter parmesan cheese, so delicious.

Now what we have today does not look anything like that recipe but it’s our updated current herb bread love. We think you will like this updated version as it’s made from our go-to 3 ingredient bread.

The funny thing is we aren’t bread bakers. We aren’t good with yeast. Luckily, these are yeast-free.  This recipe is quick, easy and healthy. Pretty darn tasty too!

Let’s get to bread baking… purely twins way 😉

If you are in need of a quick, delicious bread recipe to serve with your next gathering make this and you will win the crowd over.

And to keep it dairy-free just top with your favorite dairy-free cheese. And if you are not a goat cheese fan (shame on you, just kidding) feel free to use sheep or cow’s milk cheese. Just make sure to get high quality cheese. Grass-fed would be best.

    bread recipe
  • 1 large raw green-yellow plantain (7oz after being peeled)
  • 2 eggs
  • 1 tablespoon coconut oil (you can use any oil of your liking)
  • *optional: may add in 1/2 teaspoon baking soda for a lighter bread

  • about 1/3 cup fresh goat cheese (or any cheese of your liking)
  • 1 teaspoon italian seasoning blend (you can use any herb mix you like)

  1. Preheat oven to 350 degrees.
  2. Peel plantain.
  3. Place plantain, eggs and coconut oil into Vitamix or food processor.
  4. Blend until smooth.
  5. You have a few options for baking the bread in. Either a 6 inch pan for more thick bread, 7 or 8 inch pan for thinner slices, or in a muffin pan for individual bread rolls.
  6. Once batter is poured into pan, top with cheese and spice blend.
  7. Bakes for about 20 minutes. If using muffin pan they might bake in less time.
  8. Remove bread from pan.
  9. Best enjoyed warm.

Now this is making us hungry for some warm bread.

  3. I love re-hauling old recipes that my family makes, there’s always a healthy alternative that sometimes makes the recipe taste even better. I have recipes that use the sweetened condensed milk and I sub in canned coconut milk instead. Works surprising well

  7. Family memories. How I adore them. I feel like if I ever tried to re-create them, I would just get sad though – so I just try to make new ones. That being said, that doesn’t mean I don’t constantly think back to when my dad, siblings and I used to make donuts in our kitchen! They were soooo sooo sooo good but of course, there were lots and lots of fights during the whole baking process, LOL! Ohhhhh good memories 😉
