Remember our Valentine’s Day beet fudge chocolate protein hearts? And that we said there will be left over beet fudge. Well you can either eat that leftover yummy fudge as is or you can make it as a parfait.
Vanilla puff cereal yogurt beet fudge parfait – a healthy and fun breakfast to go!
Growing up we loved TCBY. Yep we did. It was a tradition we had with our grandfather. He loved taking us there because it made us so happy. And you know what grandparents do best? Spoil their grandchildren!
Now every once in awhile we crave yogurt and ice cream.
So we put our thinking caps on to figure out a way to create a yummy yogurt like treat. One that our tastebuds would love and our bodies would like.
Let’s just say breakfast just has been upgraded. Forget TCBY – it’s time for a healthy and quick breakfast with a little fun.
For the bottom layer we used leftover beet fudge , sprinkled a few vanilla puffs, then topped with some yogurt (we used goat yogurt) and finished off with more vanilla puff parfait! OH MY HEAVENS! SO GOOD!
We also added in a little bit of raw cacao powder into the beet fudge to make it a rich chocolate fudge 😉 Why not right?
We will be enjoying this for our Valentine’s Day breakfast!
