How is everyone? How was your weekend?

Our weekend went by really fast but it was perfect. Mainly because we got to surprise our grandfather for his 90th birthday!

We had a wonderful weekend filled with laughter, love, surprise, fun activities, food and lots of desserts. Oh and a little wine too.

Let’s begin shall we.

Here are some highlights of a few of our eats and activities over the past few days.

plantain bread bacon sandwich

Our special guest that we mentioned we were super excited for… was our mom. We made her our basic plantain bread with a few tweaks.

We made a sandwich of it with bacon along with some coconut oil spread on the bread. Delicious. She loved it.

Here is what we did for the new plantain bread:

2 plantains with 1 banana and 1/2 avocado blended with 2 egg yolks, 2 teaspoons baking powder and 1/2 teaspoon cinnamon. Baked in a coconut oiled pan at 375 degrees for about 20-25 minutes.

Before hitting the road down to the Atlanta area we enjoyed some yummy eats like brownies, arugula with grass-fed burger and homemade kombucha. And made up some goodies for the trip. We made ourselves more plantain bread and some paleo coconut flour cupcakes.

Made a new creation with our plantain bread —> plantain bread with avocado and banana. Just like the one we mentioned above.

Enjoyed a lovely dinner out on Thursday night with our mom and Gary’s parents who were in town.

After a glorious evening it was time to get ready to hit the road the next morning.

A few hours later we made it to Stone Mountain, GA. We met up with the rest of our family to get ready to surprise our grandfather.


Checked into the hotel and it was time to get the show on the road.

But first it was time to eat some lunch.

We enjoyed some perfect fit protein mixed with coconut yogurt along with plantain dipped in roasted tahini. Delicious!!!

90th birthday party

A great birthday celebration.  The surprise went perfect! It is truly amazing to think about being alive for 90 years! Oh how much our grandfather has seen and done in those 90 years. We are so blessed to have him still in our lives. We love you grandpa!

The next morning we got up to do our #purelyfitlife power program plank builder workout in the hotel room.

Love our bodyweight workouts.  Even in hotel rooms you can make time to squeeze in a short workout 🙂

We enjoyed our family time at Stone Mountain Park. Great times. Rained a little but we still managed to enjoy ourselves! We’ve been to Stone Mountain before as kids so it was fun to go again since we do not really remember it.

Last night out with the family on Saturday we all got ready for another dinner out.

Our last morning together we all enjoyed a nice brunch before we all hit the road in our separate directions. Saying goodbye to family is always hard.

After that it was time to stop by Gary’s brothers house before making our trip back to Charlotte.

Our family adventure to Stone Mountain in Atlanta was great. Everything went very smoothly. It was a fun place to go for families. Even though there was not much sun we still had a great time. Love planning out family vacations — especially if a surprise is involved.

We indulged a lot over these past few days… mainly with sweets.  But we did not worry too much about that as we knew today we could get back on track with our normal eats. Plus it was a birthday celebration that was worth living in the moment for.  A weekend we will not forget!

    1. well the brand in the stores around we live is So Delicious. We don’t eat it a lot but every now and then we get some to enjoy as we like it.

  2. wow so much to say about this post! you won’t believe how many times i thought about your plantain bread this weekend hahaha i really need to just buy a plantain and make it! i have sweet potatoes though, so i can make that version you developed!

    those peaches look amazing, too! i love fresh peaches that are so juicy they run all down your face and arms haha!!

    everything looks amazing and i am so happy you got to celebrate your grandpa <3 i am celebrating my grandpa today as it has been 6 years since he passed away <3

  5. Good on you girls for indulging every now and again. I also had lots of sweet treats (my fertility fudgesicles and some paleo brownies) because it was so hot outside (hummm perhaps not as good of a reason as a 90th bday!). I think it’s actually good for the metabolism to change it up every now and again! Can’t wait for the new recipes!

    I was born and raised here in Georgia. We live out near Athens.

  13. Hmmm… I keep seeing this plantain bread situation you’ve got going on over here and am curious. You sold me with avocados. Bananas and I don’t get along, but if they’re cooked they’re okay. So I may have to give this a try. Has to be better than gluten!
