So yesterday we played around in the kitchen some and created some #strangebutgood snacks. Not one but two new recipes for you today!
We made kombucha soft serve ice cream plus avocado protein plantain pudding.
Yes you heard us right… kombucha ice cream and avocado pudding with plantains! More on those yummy recipes below. You can scroll down to end if you want the recipe immediately. Or you can read about the rest of our amazing eats and workouts.
Took a 20 minute walk with our favorite little furry friend (and to get some vitamin D)! And hydrated ourselves with some Zico coconut water.

Lately we have been really happy where we are in our lives and living in the present moment. Maybe it is the sun or maybe from our daily dose of carbs that are making us have this feel good feeling. Either way we are loving it!

Breakfast was banana, arugula and local eggs.
Love this combo! Coconut oil cinnamon and cardamom just complete our breakfast bowls.
And remember these are foods that are working for OUR bodies right NOW. We all have to find what food combos work. And remember it can change from time to time as our bodies are always changing too.
Oh YES WE DID!!
Made more of our cashew kombucha cocktail and blended it with frozen bananas! It was the perfect post workout meal, do you agree?
Who doesn’t love a good bowl of soft serve ice cream on a hot day? We do! Especially this new version!
It was A-M-A-Z-I-N-G!
Our bowl did melt a little fast because by the time we were done taking pictures it was pretty soft and melted haha. Turned more into a ice cream soup. It still tasted amazing. We loved the mix of kombucha flavor with the bananas!
Later we enjoyed grass-fed beef burgers with baked plantains and cooked spinach with coconut oil.
We are LOVING plantains as our main carb source! Remember we all have to find what foods work for yourself. Play around with different things until you discover your happy foods.

Here we have our strange but good recipe for you!
Late afternoon snack was something fun and different.
We both were craving a nice thick avocado pudding. Plus had some leftover cooked plantains from earlier so we thought why not add the cooked plantain to our pudding to see what happens!
Depending on how ripe your plantain is might vary the flavor. Ours was a little green still. Make sure to cook your plantain before putting it into pudding.
Oh boy it was sooo good!
Rich. Thick. Creamy. Satisfying! Not too sweet, a little savory.
Dinner was light since still a little full from pudding. Did some white rice, mahi mahi, coconut oil, ghee, yellow summer squash and black lava sea salt.
I (Michelle) was still very full from the plantain avocado pudding, so like Lori I kept my dinner simple too with white rice, coconut oil, ghee, zucchini and tuna.
