Our day yesterday:
Started our morning with a green juice. Each juice was made from 1/2 cucumber, 2 carrots, 1 head romaine, parsley, 3 stalks kale, ginger and lemon.
Received some fruit sticks.
Got some soap nuts… more on that on another post soon.
Saw Farmhouse Culture sauerkraut at Whole Foods and had to get it. As we love that brand!
Next enjoyed arugula with sautéed swiss chard, 3 whole eggs, coconut oil and some sauerkraut on top. First time trying sauerkraut since doing our gut healing journey. We hope our bodies like it. We just had 1 tbsp to start slowly with having it again.
Made some of our protein english muffins topped with coconut oil. We forgot to put some coconut oil in the batter and they did not come out as well as with the oil in it. So lesson learned it needs that little bit of oil in the recipe.
We enjoyed some mint avocado pudding topped with bee pollen and cacao nibs.
Dinner was salmon, butter lettuce, olive oil, dulse flakes, fennel, cauliflower and topped with nutritional yeast.
After dinner whipped up some gelatin mush with more cacao nibs.
We both felt good yesterday. Still busy and being productive with our time together. We have so many ideas that it can be hard for us to stay on track, but we are getting better with time management.
Are you good with managing your time with activities?

Shout Outs:
A little ode to our chocolate chip coconut cookies! We recently received Julianne’s comment and sparked us to go back and thank everyone who has commented that they loved the recipe!
We love cookies, you?

Where do u get ur gelatin? Amazon isn’t selling the great Lakes beef gelatin anymore
Interested to see how u do on sauerkraut… Are u still putting coconut oil in ur juices?
oh really…interesting, we will have to look into why Amazon not selling it and find another online retailer.
and did not like how it got cold and chunky in the juices, so now just enjoy the juice plain.
No we stopped the oil in our juices – mainly keep forgetting to put it in
Great opportunities in the works!
What kind of bee pollen do you use? Does it have sugar? I have heard so much about it, but never tried it. I am looking forward to the arrival of my protein powder so I can try the english muffins again. Last time they did not cook very well, and lost the airy bubbles once I stirred in the coconut oil at the end. I made them with chia egg. Any suggestions?
Made the coconut flour chocolate chips last week…they were quite yummy. I think next time I will weigh out the coconut oil because they seemed dry and in much need of flattening. Still delicious down to the last crumb though!!!! Tummy approved, too!
Thanks!
loved Katy’s idea too! great way to support!

Yummy eats per usual! Katy’s posts are always so awesome, especially for me since I basically no nothing about computers/all that jazz. I’m actually not the biggest cookie fan in the world, I love muffins though!
