Just because the weather is getting cooler doesn’t mean we cannot have ice cream, right?
Anyone else enjoy ice cream during the cold months? I remember Lori and I in college would crave ice cream every once in awhile when it was 40 degrees out! haha Sometimes a girl just needs her ice cream.
Before heading out of town a week ago, I remembered talking with Lori and saying I think I might have some leftover coconut ice cream. I told her that I had an idea – put some protein thin mint pieces in it! Thankfully, Lori loved the idea. Even if she didn’t I was going to do it anyway. Such a rebel.
I was already making up protein thin mints so that is why I thought of the idea of adding some to the coconut ice cream I had made up. I know so creative, haha
Why not have them together! We have done this before making mint avocado ice cream.
Easy simple coconut thin mint ice cream.
No ice cream maker needed.
Actually no fancy equipment of any kind, well besides a nice blender.
Thin Mint Coconut Ice Cream
serves 1
A few scoops of coconut ice cream (I stirred in a little more coconut milk to help make it smoother and creamier from being stored in freezer it got a little dry)
1- 2 thin mint cookies
Crumble cookies into ice cream and enjoy!
Other favorite great ice creams we love:
Peach ice cream (avocado and coconut free)
Maybe mint is not your thing but cookie dough ice cream is…make some coconut ice cream and crumble in coconut chocolate chip cookies!
