It is a beautiful day here in North Carolina! How is the weather in your area? Fall like yet?
When Michelle was in town a few days ago we did what we love to do… make recipes in the kitchen!
I cherish those moments now when we get to have fun in the kitchen together. We also tend to make a mess and have successes and a few failures. But we love every minute of it.
Our ways of playing in the kitchen nowadays is completely different than it was a few years ago. What Michelle and I have learned over the years about food has made us change how we go about developing recipes. As you can tell, we love playing with unique ingredients and textures.
Ever since we discovered sweet potato flour we have been loving it in our recipes. We love how it taste and the moisture it provides.
Since we are always on the go and need quick filling snacks, we created two more sweet potato flour recipes that fit that criteria. In addition, we like to keep things grain free if possible, so another reason why we love sweet potato flour. Even though we love coconut flour it is nice to have an alternative for something different.
One snack muffin (what we are calling them) is based out of hemp protein, though we feel other protein powders would work. And the second snack muffin recipe is cocoa based. Who doesn’t love a good chocolate snack? Michelle and I do!
We added in some baking soda to the cocoa one since we like the way cocoa and baking soda react together. And in the hemp protein one we did not add leavening to it, as we wanted to see how much it would rise. You can see the difference in the two cakes. We love doing little experiments like this too

** note: we baked these snack muffins in a large muffin pan, your size will vary depending on what pan you bake these in (regular, large, or minis)
Purelytwins Recipe: Hemp Protein (sweet potato flour) Snack Muffin (grain, gluten, soy, nut free)
serves:1
Ingredients:
- 1 tablespoon sweet potato flour (or any flour of choice)
- 2 tablespoons hemp protein powder (or any protein powder of choice)
- 1 whole egg
- 15-20 drops liquid stevia (or favorite sweetener about 1-3 teaspoons)
- 1/2 tablespoon coconut oil
Directions:
Preheat oven to 350 degrees.
Place all ingredients into a bowl and stir till combined.
Grab a cupcake/muffin pan and lightly grease or use muffin liners.
Scoop batter into cupcake. Makes one large muffin, or you could scoop into 2 cups and make two smaller muffins.
Bake for about 12-15 minutes. Or till toothpick comes out clean or firm to the touch.
This snack muffin we found to be a little dense, but had a unique light, spongy like texture as well.
Now for the second snack muffin.

- 1 tablespoons cocoa
- 1 whole egg
- 1/8 teaspoon baking soda
- 15-20 drops liquid stevia (or favorite sweetener about 1-3 teaspoons)
- 1/2 tablespoon coconut oil
Directions:
Preheat oven to 350 degrees.
Place all ingredients into a bowl and stir till combined.
Grab a cupcake/muffin pan and lightly grease or use muffin liners.
Scoop batter into cupcake. Makes one large muffin, or you could scoop into 2 cups and make two smaller muffins.
Bake for about 13-18 minutes. Or till toothpick comes out clean or firm to the touch.
This one we found to be a light in texture! It was delicious.
Michelle and I adore baking little snacks like these muffins. Sometimes we even call them our little ‘egg’ snack muffins.
We usually enjoy them on a daily basis of some variation or another.
You can somewhat tell the difference in the two cakes. Both were delicious. Similar yet different.

i love these type of recipes! i’m always looking for a post-workout snack and the blend of protein+carbs in this seems like it’d do the trick.
do you think i could substitute sweet potato flour for a couple tbsp of actual sweet potato (roasted)?

you could try real sweet potatoes, not sure how it would come out, but always worth a shot

Mmmmm both look delicious! “SWEET” post! Think you can sub chia gel for the egg? I am so intrigued by this sweet potato flour! I adore sweet potatoes and am always looking for gluten-free baking options. They don’t have it here in France (surprise, surprise! haha I swear this is a 3rd world country

Hi Michelle and Lori! I stumbled upon your blog a few weeks ago when searching for green smoothies. I’m so glad I found it! I made the cocoa sweet potato flour muffins and they were great. Then tonight I tried the same recipe but subsituted steamed, mashed sweet potatoes for the flour (the exact same amount). It was even better! It rose higher in the pan and was super moist. I’m going to make these all of the time!
