Today is national soft ice cream holiday. Did you know that?
If not, no worries, Michelle and I just found out this week. We made a little video, check it out!

In honor of celebrating such a wonderful holiday I thought about remaking our original avocado soft serve mint ice cream. Plus I had avocados that were perfectly ripe that were screaming to make ice cream. Yes I talk to my food.
Though instead of making mint – shock- I know since that is Michelle and I’s favorite flavor, I decided to make it lime. Another favorite flavor especially blended with avocado.

Another great thing about this ice cream, besides being made with avocado, it is raw, vegan, dairy free, and low in sugar!! Say what? Low sugar ice cream. You heard me right.
This dessert only uses 4 ingredients too. Well 5 if you count the lime zest and juice separately.
There is a catch with this so easy ice cream recipe…it is made with coconut cream!
Have you heard of coconut cream before? If not, go check it out here.
Seriously the best. Michelle and I are in love with it. We plan on making so many yummy things with it, can’t wait to share them with you.

Key ingredients.

Love the smell of lime zest. So refreshing.

Perfectly ripe avocado.

Coconut cream. So good. Got ours from Wilderness Family Naturals.

About 2 cups of avocado sliced.

Throw all ingredients into blender.

Start to blend.

Smooth and creamy. Pure deliciousness right there friends!

Place in glass bowl to put in freezer to set for a few hours. Stirring about 2 times an hour till you get desired texture. You could eat as is like pudding if you wanted!
Once set.

Scoop out into bowls and enjoy. Once it sits out at room temperature is perfect light creamy ice cream texture.

Hard to believe this guilt free dairy free soft ice cream is just made of our 4 ingredients! It is soooo good! Trust me.
A little sweet, a little tart and oh so creamy!
- 2 medium size Hass avocados (about 2 cups sliced)
- 1 cup coconut cream
- ½ cup lime juice (juice from 3 medium to large limes)
- lime zest from 3 limes
- ½ teaspoon liquid stevia
- Place avocado, coconut cream, lime juice and zest and stevia into your high speed blender like a Vita-mix or a food processor might work.
- Blend till nice and creamy!
- And try not to eat the whole batter while taste testing.
- Adjust sweetness or tartness (add in more lime zest) if needed.
- Pour batter in a glass dish and place into freezer to set.
- Stir a few times an hour.
- Take about 4-5 hours to really set.

Now who else is going to celebrate with us?
Check out our coconut ice cream too! Only four ingredients and no ice cream maker.
till next time,
xoxo

Brittany you would love it!
I’ve GOT to try this…I LOVE avocado, but I haven’t tried it as a dessert yet. I’ve seen it in puddings, cakes, etc. This is going on my “Must Make” list.

Oh Katie we have a ton of dessert recipes using avocado! It is our fav.
I’ve never used coconut cream. How is it made? Does it contain sugar or a sweetener?
Yum and you don’t even need an ice cream maker!

Wanna try this right now! Sadly – I have to spend 7 more hours in my crazy hot office, so maybe later today. But hey, what a blessing, that a ripe avocado is waiting at home. Do you think I could replace the liquid stevia with stevia powder?
Ksenija, yes, just start slow and adjust more stevia to taste
This is perfect! I have all these items at home. Have you tried this in an ice cream machine by chance? I just got one and I’m thinking I don’t need to let it set. Maybe I can just pour the ingredients straight into the ice cream maker?
Well my ice cream maker is broken, so have not tried it in one. But I am sure it would be ok.
I’m new to your ladies’ blog and I just think you’re adorable! I’m happy I found ya and love this ice cream recipe. I’ve been wanting to try a coconut/avocado ice cream and just haven’t gotten around to it yet. I use the VitaMix for just about everything, so I’m excited to see I can use it for this recipe!
Looking forward to seeing more great recipes on your site!

Thanks for sharing girls! We have an abundance of avocados this time of year and I am always wanting new recipes so I naturally jumped on yours! I made this recipe around the holidays and ran into a problem that I’m hoping you can help me sort out. I followed your recipe exactly (even your pictures matched my attempt up to the freezing step!). My problem is that when, after freezing through, I removed the ice cream to serve and it was rock hard, like a block of ice! I left it to soften on the counter but even thirty minutes later the edges were becoming soupy and the center was still rock hard, unable to scoop. It eventually thawed completely and resembled the creamy-moussey step before freezing. Any idea what happened or how to remedy? Thanks again for sharing! -Marlo
