We have been meaning to make almond flour cookies for some time as we love almonds.

We use almonds all the time in our raw dessert recipes and this is our first time using in a baked cookie.

The almond flour mixed with the coconut flour provide wonderful flavor and texture to these chocolate chip cookies.

Almond meal chocolate chip cookies. Gluten-free. Paleo.

Gluten-free paleo chocolate chip cookie recipe made from almond flour and coconut flour.

  • Prep Time: 5 minutes
  • Cook Time: 10 minutes
  • Total Time: 15 minutes

Ingredients

Scale
  • 2/3 cup almond flour*
  • 1/3 cup coconut flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/3 cup sugar
  • 1 tsp vanilla extract
  • 1 whole egg**
  • 1/4 cup coconut oil
  • 1/3 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees.
  2. Place all ingredients into a bowl and stir together.
  3. Batter will be slightly thick and dry. If too dry, add in about 2-4 tbsp coconut milk or almond milk.
  4. Scoop cookie dough batter onto cookie trays.
  5. Using your fingers gently pat cookies flat or till desired thickness.
  6. Bake cookies for about 12 minutes.
  7. Let cool a little as they are delicate.

Notes

*as we mentioned above, we took whole almonds and place in food processor. pulse till small pieces like flour. it will be a little chunky, which we liked! We have also used store bough almond flour and they worked too.

**we have not tested these without an egg yet. but could do 1 1/2 tbsp flax with 3 tbsp water to make flax gel

This cookies won’t last long in your house. Good thing they are easy to make then.

i am tripping out right now! i made up an almond flour choc chip cookie last night! the ingredients are shockingly similar! i brought them to the office today and everyone is loving them–even those folks who don’t like healthy food, as they say. anyway, just thought this was such a weird coincidence! your cookies look awesome, love you girls!

girls, I’ve made these THREE times in the last 2 weeks… that tells you how much my husband likes them 🙂 I did them with the flax egg, and worked perfectly. The first time I made them, my coconut oil was pretty hard and did NOT want to mix into the batter… so I added a touch of almond milk, and my husband devoured them. He loved the soft texture, because healthy cookies always wind up being pretty chewy… The 2nd time I made them, I melted the coconut oil before adding the rest of the ingredients, and I thought they were perfect but my husband preferred the soft ones. Oh, and the 2nd & 3rd time I made them, I subbed protein powder for part of the coconut flour – I did 1/3 cup each of brown rice protein, coconut flour and almond meal. It was fantastic! My husband thanks you for this recipe 😉

can you substitute coconut nectar for the coconut sugar?

you can but it will change the final outcome of the cookie as coconut nectar is a liquid sweetener. you might have to adjust your other liquids so the batter not too runny.

You can give it a try with tigernut, we are not sure how it will come out. We do a mix of regular and coconut but either will work.

Wow!!! These are soo good. I divided the batter…. adding chocolate chips and pecans to half and Cinnamon and pecans to the other half. Both were excellent. I will try other mix-ins like coconut and maybe dates etc. They are very very good. Oh and I subbed half the sugar for coconut nectar (used 1 1/2 TBSP Coconut nectar and 1/4 cup sugar). Batter consistency was perfect!

So freakin good! I’ve tried various chocolate chip cookie recipes using coconut and almond flour and this one is by far the best.

I was wondering if I could use honey instead of sugar as a sweetener. If so, should I use less since honey is sweeter?

I think honey would work, just use a little less (maybe 3 tbsp?). Actually, I’ve made cookies using almond & coconut flour and used a liquid sweetener, which worked good. I would give it a try!

I made these today and they were delicious, however, they were soft and cake like and I wonder if it’s perhaps I added too much milk. What is the cookie texture supposed to be like? I like my cookies crispy on the outside and soft on the inside. By the way, is the coconut oil supposed to be melted or softened?

Could I substitute in a sugar-free version for these cookies? Love that they are gluten free and dairy free, but I also need sugar free & have yet to find a recipe that works. I was thinking either Sukrin Gold to substitute for the sugar or Stevia in the raw…which would you recommend?

Made these just now and am having a hard time yelling loud enough to the kids upstairs that the cookies are ready. I mean, I could probably finish them all right now and nobody would have to know. They’re great. I used Enjoy Life mini chips and grapeseed oil because that’s what I had but next time I think these will get a heap of coconut flakes, too.

I made this cookies tonight and they were good! I subbed a flax egg like some suggested and use a liquid sweetener instead of granulated sugar. The flavor was good only slightly coconuty which means next time I could add a little more vanilla? These weren’t crunchy though, and they didn’t spread in the oven which I was kind of hoping they would. Do you think if I baked em at 375 for slightly less time they would be crispy? We don’t understand. The recipe is right on the blog. Ingredients

2/3 cup almond flour*

How many cookies will this make? Serving size? The oven temperature is missing and the time to cook is missing.

The temperature and time are in the steps to make it. Oven 350 and for about 12 minutes. The number of cookies will vary.
